What a splendid Saturday I had. Something very unusual happened today, I woke up early this morning resisting the warmth and coziness of the blanket. Started this day with a Collard Green Scrambled eggs breakfast. I had a bundle of collard greens still left, so for dinner I made Tomato chicken and stuffed it into Collard greens. Topped it with salsa and grated parmesan, baked for 10 minutes. I can’t put into words how much we loved this healthy and delicious dish.

I am so glad that even after having a long day and after spending more than 3 hours shopping in the grocery store, I was able to fix my  dinner. I was really tempted to carry out my dinner on my way back home. This pineapple chicken was way better than any restaurant food.

Today my niece turned one! She is no more a teeny weeny baby, she has already turned into a cute little girl and her smile will melt anyone’s heart. There was a live webcam telecast of the birthday bash exclusively for me. After playing with my niece and chatting my family members, I rushed to work. Came home freezing and made Carrot Potato Chicken. Weather has been not so great today and a huge snowstorm and blizzard are on its way, trying to stay warm and hopefully I can take off from work tomorrow. Stay warm everyone!

It was a great day for me by all means, yet I felt so depressed for no reason. On such days I enlighten myself with delicious food. I was so damn sure about what to make for dinner. Food that I grew up eating have always been a comfort for me, especially during lousy days. Kerala’s famous Puttu with Chicken drummettes curry cheered me up!

It took me almost an hour to decide on what to make for dinner. I was out of both ideas and energy, finally I had no other choice but whip up a quick fix Chicken Biryani.

Carrot Chicken Soup and Mashed Sweet Potato

Hubby volunteered to make dinner and he whipped up two incredible dishes. I couldn’t be more proud of him.
Recipe:
Mashed Sweet Potato Recipe:
Ingredients:
  • Sweet potato- 3 no’s
  • Ground Cinnamon- 1/4 tsp
  • Ground pepper- 1/4 tsp
  • Milk- 1/4 cup

Preparation:

  1. Cook sweet potatoes in boiling water till it has cooked well.
  2. Mash it using a potato masher or using a wooden spoon.
  3. Add ground cinnamon, ground pepper and milk to it.
  4. Combine and cook it for a few minutes.
  5. Serve hot.

Day 1 – Spinach Chicken Pasta

Day 1 – Spinach Chicken Pasta

My first dinner of 2011: A healthy spinach chicken served over Fusilli Pasta.

Recipe:

  • Spinach- 1/2 bag
  1. Add spinach to boiling water and cook for 2 minutes.
  2. Drain the spinach and puree it into a thick paste.

For cooking chicken: 

  • Oil- 2 tbsp
  • Whole Garam masala- 2 cardamom, 2 cloves, 1 inch cinnamon
  • Cumin seeds- 1/2 tsp
  • Garlic chopped- 2 cloves
  • Onion, chopped- 1
  • Ginger-garlic paste- 1 tbsp
  • Tomatoes chopped – 1
  • Chicken boneless cubed- 1/2 pound
  • Salt- to taste
Ground Spices:
  • Chilly powder- 1/2 tsp
  • Turmeric powder- 1/4 tsp
  • Cumin powder- 1 tsp
  • Coriander powder- 1 tsp
  • Fenugreek leaves- 2 tsp
  • Ground pepper- 1/4 tsp
Preparation:
  • In a large pan, add oil, put whole garam masala, cumin seeds and saute for a second.
  • Add garlic, saute for a minute.
  • Add onions and cook till tender.
  • Add salt to taste.
  • Add ginger-garlic paste, cook for 2 minutes.
  • Now, add the tomatoes and cook till it gets mashed.
  • Add the chicken and cook covered till it turns tender and well done.
  • Now, add all the ground spices and cook for a few minutes.
  • Pour the pureed spinach to the mixture and cook for 5 minutes.
  • Add 1/4 tsp ground pepper, combine well.
  • Taste and add salt if needed.
  • Cook pasta in boiling water along with little salt till tender, drain the water.
  • Spread pasta on a plate and pour the spinach chicken over the pasta.
  • Serve hot.
