Day 166 - Chilli Baby Corn and Bamboo Shoots

This is the second time this week I am making baby corn. I’ve always loved baby corns and used to add it to stir fries. We both loved the fried baby corn dish that I had made a couple of days ago and so for tonight’s dinner I wanted to try a different dish with it and made chilli baby corn. I also added bamboo shoots along with baby corns. This is one of the most delicious vegetarian dishes I had in a while and I am sure even the hard core non-vegetarians will find it hard to resist. it.

Recipe:

Ingredients:

To make batter

  • Corn flour- 1/2 cup
  • Rice flour- 1 tbsp
  • Water- 1/4 +1/8 cup
  • Ginger-garlic paste- 2 tsp
  • Ground pepper- 1/4 tsp
  • Salt- to taste
Other ingredients:
  • Baby corn, canned- 1 can
  • Bamboo shoots, canned- 1 can
  • Oil- enough to deep fry
  • Oil- 2 tbsp
  • Ginger minced- 2 tsp
  • Garlic minced- 1 tsp
  • Red dry chilly- 2 no’s
  • Onions, chopped- 2
  • Salt- little
  • Green pepper, diced-1
  • Soy sauce- 3 tbsp
  • Tomato ketchup – 4 tbsp
  • Rice vinegar- 1 tbsp
  • Chili paste- 1 tsp
  • Spring onion, chopped- 2 stalks
  • Cilantro, chopped- 1 handful
Preparation:
  1. Combine corn flour, rice flour, water, ginger-garlic paste, ground pepper and salt into a thick batter.
  2. Dip baby corn(drained and rinsed) and bamboo shoots in this batter and deep fry in oil.
  3. Heat a pan, add oil, ginger minced, garlic minced, red dry chilly, onions, saute for a few minutes.
  4. Add little salt, give it a stir.
  5. Add green pepper and cook covered
  6. Add soy sauce, tomato ketchup, rice vinegar, chili paste, combine well and saute.
  7. Add the fried baby corn, bamboo shoots, spring onion chopped- 2 stalks, cilantro- 1 handful and combine well.
  8. Serve on a plate.
