Day 160 - Baked Honey Chicken

While I was out in my backyard watering my veggie garden, I heard from my neighbor that he lost his 5 foot pet snake and he is pretty sure that it’s hiding somewhere in my backyard. Well, I was out of breath for a while and was terrified. But seeing my frustrated neighbor I felt so sad and I assured him that he’ll find his lily back soon. Well, it took a few hours for me to calm down and to get back to cooking dinner. I couldn’t think of anything other than baking, hence baked honey chicken and veggies.The chicken was very moist and flavorful.

Recipe:

  • Chicken breasts- 3 no’s (cut each chicken breast into halves)
  • Garlic, minced- 4 cloves
  • Ginger, minced- 3 inch
  • Soy sauce- 1/4 cup
  • Honey- 1/4 cup
  • Chili paste or Sambal Oelek- 1 tsp
  • Ground pepper- 1tsp
  • Green onions, chopped- 2 stalks
  • Salt- little
Preparation:
  •  Marinate the chicken breasts with the above mentioned ingredients for 30 minutes.
  • Preheat oven to 350 F.
  • Place the chicken on a baking sheet lined with aluminum foil.
  • Bake for 20 minutes.
  • Flip over and bake for another 20 more minutes.
  • You could even use the same sauce to spread over veggies- carrot and beans and saute it in a skillet till it turns light brown.
