It was a freezing but sunny day! I had to sip a soup to warm me up, ever since I had tried Borscht at CN tower 360 restaurant I had been thinking of making it. Finally, for dinner I made it along with Indian style Polenta stir fry. Last time when I made polenta I just had it like that, so this time I wanted to try something different, so stir fried it with veggies totally Indian way.

It was a relaxing day. For dinner, made oyster cabbage vermicelli topped with fried onions.

It’s been a hectic week, I am so glad that finally it’s weekend. Hubby came home with a couple of bags of tortilla chips and a huge jar of salsa. Thanks to him for making it so easy for me. Without much pondering, I made a veggie version of nachos, layered the tortilla chips with refried beans, pickled jalapenos, salsa and cheddar cheese.

If i have to put my thinking cap on to decide what to make for dinner on a Friday night, I would rather settle down on noodles or pasta. Friday nights are to chill not to think! This explains why I made noodles for dinner.

I was feeling little lazy today and the freezing weather made me lazier in the evening. I couldn’t even move from my couch to make dinner, finally with much effort I made this veggie pasta. When I am lazy, I scream for pasta.

I have around 10 lbs of apple merrily sitting in the refrigerator that I had picked from the Orchard farm. Besides eating them as it is I haven’t tried anything, hence for dinner I wanted to make something with apples. Without much thoughts, I made apple couscous and my house started to smell like biryani. I added mint, garam masala and ghee which made all the difference. Mesmerized by the aroma I enjoyed a huge plate of this simple delicious dinner.

It was a very busy day and couldn’t think of anything but a quick fix dinner. Made veggie noodles.

I had a long tiring day and my hubby made the dinner as I am way too tired to even think of dinner. He made sesame potato stir fry, it tasted really good.

I had heck a lot of things to be done yet I spent this day sitting idle negotiating with my frozen brain. To get over this feeling I went biking in the evening. It was such a beautiful day, the sky was clear, Sun shined with so much dignity and there was a chill in the air. I embraced the nature, the weather and the ride. For dinner, whipped up an easy dish by combining mixed veggies, fava beans and basmati rice. I poured Kraft creamy masala salad dressing over this dish and there was a sudden transition from bland taste to deliciousness. It was really yummy!

What a relief! I’ve been feeling quite frustrated for the past few days and today I felt quite relieved. I came home and spent some time with the plants, plucked some tomatoes and entered the kitchen for making dinner. I had a raw plantian sitting in my refrigerator, I made plantain chips with it and for dinner made Baby corn in Tomato sauce.

Recipe:

Quite similar to dragon chicken, for making this I baked the baby corn at 375 F for 25 minutes and followed the rest of the recipe. I also added 1 chopped red onion while stir frying.


Day 252 – Lentil Stew

Today was the craziest day ever in my life. On the bright side, I have been on a vegetarian diet for three days in a row. My husband and I are planning to be vegetarians for a month, hopefully it will work. For dinner, we had lentil stew.

Had a crazy day at work and it’s going to be crazy for the coming days as well as my first year research report is due by the end of this month. For dinner, I made sesame eggplant roast served over spaghetti, Tangy coleslaw and my husband made Potato stir fry.

Made a vegetarian dinner. Last weekend, I had bought bell peppers of all colors, stuffed them with coconut potato mix and slow cooked it. It was such a chilly day and needed a bowl of broccoli yogurt soup to warm up.

Kerala’s biggest festival Onam is around the corner. While thinking about Onam I got the craving for Sadya today, I wanted to make all the sadya dishes and ended up making only a few. I made Rosematta rice or red rice, Sambar(Lentil and Mixed Veggie curry) just like restaurant style, Cucumber pulissery(cucumber in yogurt sauce) and for dessert I made my favorite Tender Coconut Pudding. Sadya is served on plantain leaf, I had plantain leaf and so served the dishes on it. You should try serving your food on plantain leaf and eating on it, the dishes would taste unbelievably yummy. Wish I could eat everyday on plantain leaves.

Yet another lazy evening and made a quick dinner with quinoa and vegetables. I am in love with the crunchy nutty flavor of quinoa.

Getting ready for Eid. This evening I went shopping for tomorrow’s Eid party, came home late and so made a quick dinner. Combined potato, green pepper along with black beans and added some seasonings. Surprise! hubby loved this simple vegetarian dinner.
