Day 279 - Lentil Chicken Haleem

A very very sad day! The legend, the genius Steve Jobs has passed away. When I read this news on my Mac, my heart ached and felt as if someone close to me has passed away. None can replace him, RIP steve! you will never be forgotten.

Looks like flu is going to embrace me, feeling very sick, so for dinner made a hot lentil chicken soup, used haleem masala to season it. I am so in need of a sound sleep.

Day 185 – Baked Chicken and Veggie Soup

Day 185 - Baked Chicken and Veggie Soup

After a long weekend going back to work is the toughest thing ever and to focus the mind is even more tough. Anyway, I am so glad that I got over with this day. Alright! today I figured out that in my hub’s dictionary “it’s been a while” means ” half a day or a few hours”. While I was making a mixed veggie soup for dinner, my hubby started baking chicken. I was way too surprised to see him cooking and asked the reason for a second dish. He then politely replied: “It’s been a while since I had chicken”. I had no comments on this.

Hence I made the mixed veggie soup and hubby baked the chicken. Now I know the trick to make him cook, I am planning to make more veggie dishes hereafter.

Veggie Soup

I used Easy Beef soup recipe, of course without adding the beef.

For baking chicken:  my hubby used store bought lemon pepper sauce to marinate it and baked it at 375 F for 30-40 minutes.

Day 138 – Rice-Lentil Veggie Soup

Day 138 - Rice-Lentil Veggie Soup

Dear Sun, I would really appreciate if you could stop hiding among the dark clouds and give us some sunshine and warmth. This is what I have been praying all day long. It’s been 5 days since we have seen sunshine, hmm. And I fell very sick today, I geared down and slept all day long. For dinner, I couldn’t think of anything but soup so made a hearty thick soup with rice, lentils and all kinds of veggies that was in my refrigerator. After sipping this warm soup I am feeling much better.

  • Cook rice- 1/2 cup, red lentil-1/2 cup and carrots chopped small- 3 no’s together with water.
  • After it has cooked add Haleem Masala- 3 tbsp or depending upon how spicy you want.
  • Mix everything well and cook for a few more minutes.
  • Serve hot.

Day 33 – Asparagus Soup

Day 33 - Asparagus Soup

I took the day off today_. Seeing last night’s heavy snowstorm and blizzard I was hoping that my university will declare today a holiday. However, this morning the weather turned out to be surprisingly calm and quiet. For me, the thought of getting ready and going out made me a bit lazy. Hence, I declared holiday for myself. Obviously, the only thing I did for the whole day was to cozily lie down on my couch listening to my favorite music. In the evening, I badly needed a warm soup and hence made Creamy Asparagus soup, which was my dinner.

Day 22 – Rice-Mung Bean Coconut Milk Soup and Uzhunnu Vada

Day 22 - Moong Dal Rice Soup with Uzhunnu Vada

After a video chat with my sister and niece, I curled up on the couch home sick and nostalgic. Oh ya, I get this kind of feeling quite often. On such days, I try my best to cheer myself up usually by making the foods that I had enjoyed with my family. Foods that are filled with memories, laughs, comfort and full of life. So this evening I decided to make a fried snack that could bring back those beautiful memories of my family and hometown. My husband and I emptied the entire plate in just one sitting, it was so good! I felt pretty tired after that and for dinner I made Rice-Mung bean coconut milk soup or Kanji topped with olives.
