This evening while coming home, my mind was full of this dish. It’s been a long timee since I made this dish. This is  one of our family favorites and my mom makes this often. Last year when I visited my mom, one dish that I had asked to prepare for me was this. I absolutely adore this dish, full of flavor. This can be made with shrimp, chicken, goat meat, beef etc. My favorite is with shrimp, so for dinner I made with shrimp.

Rainy day!!! First thought was to make a hot soup or stew, but went with the second thought Shrimp pizza and Shrimp Pepper pizza. This pizza is gluten free that’s why the crust looks crispy, I have to tell you it’s not the best tasting pizza in the world.

It was bone chilling cold today, I had to wear sweater to work. Looks like summer has faded away, I am not yet ready for winter though. For dinner, I made a stir fry: Shrimp with Okra. It was an easy recipe and tasted good.

I got tired of the usual shrimp curries and stir fries, this evening I still made a curry but in a totally different way. Used Kashmiri red chilli powder, hence the deep red color. It turned out good and I had this with store bought paratha.

Felt too lazy to cook and so headed to Jambalaya restaurant. We had curried shrimp roti and curried goat.

It was such a beautiful day today! Today I biked to work for the first time, going to work was so easy as it was mostly downhill ride, well coming back riding uphill was little exhausting. Anyway, I had so much fun and had my work out done. In the evening it was so windy and sunny, I had a lot of gardening work to do, beautified the yard some more. Gardening is a never ending process, you can just keep on doing. For dinner, I made green chilly shrimp along with veggies. I used green chilly sauce as the seasoning and drizzled sesame oil at the end. It was easy to make and very delicious at the same time. Note: the flower in the picture is from my garden, it’s begonia, one of my favorite flowers.

Recipe:

Ingredients:

  • Shrimp, deveined- 1/2 pound
  • Carrot cut long- 1
  • Red pepper, cut long- 1
  • Celery, cut long- 1 stalk
  • Broccoli, florets- 1/2 broccoli
  • Thai Kitchen Green curry paste- 3 tbsp
  • Water or coconut milk- 1/2 cup

Preparation:

  1. In a wok or pan, cook veggies and shrimp till tender.
  2. Add Thai green curry paste to it, saute for a minute.
  3. Add water or coconut milk, cook for another 3 minutes.
  4. Serve hot.

Wohooo, had my first ever basil harvest from my veggie garden this evening. It was so rewarding and I felt like I am on cloud nine. Without any doubt, the best thing I have done this spring was building my veggie garden. To me gardening is relaxing and now it’s turning to be therapeutic. Watering the plants, taking care of it and finally harvesting the fruits and veggies: gardening couldn’t get any better than this. I am not sure how many times I would have dreamt of plucking veggies from my own garden and cooking with it, finally my dream is coming to reality. After harvesting the basil, what’s next? Of course, preparing dinner with it, made basil shrimp with homegrown organic basil; had the most satisfying dinner ever!

Recipe:

  • Shrimp- 15 no’s
  • Chilly powder- 1/2 tsp
  • Turmeric powder-1/4 tsp
  • Cumin powder-1/4 tsp
  • Coriander powder- 1/2 tsp
  • Garam masala- 1/2 tsp
  • Lemon juice- 1 tsp
  • Oil- 3 tbsp
  • Coconut milk- 3/4 cup
  • Corn flour- 1/2 tbsp (dissolved in 1 tsp cold water)
  • Worcestershire sauce- 1 tsp
  • Oil- 1 tbsp,
  • Ginger minced- 1 tsp
  • Garlic minced- 1 tsp
  • Green chilly chopped- 1
  • Onion chopped-1
  • Basil leaves chopped- 6-7 leaves
Preparation:
  1. Marinate the shrimp with chilly powder, turmeric powder, cumin powder, coriander powder, garam masala and lemon juice.
  2. Fry in 3 tbsp oil till golden in color.
  3. After you remove the shrimp, in to the same pan add add coconut milk, corn flour- 1/2 tbsp dissolved in 1 tsp cold water, worcestershire sauce and cook for 2 minutes and remove from the heat, keep aside.
  4. In another pan, add oil, ginger minced, garlic minced, green chilly chopped, onion chopped, saute till onion turns tender.
  5. Add fried shrimp, previously prepared coconut milk mixture, basil leaves chopped, cook for 2 minutes.
  6. Serve with Jasmine rice.

Yet another beautiful day. I am so in love with the mildly warm and sunny weather, everything looks fresh and inviting. Beautiful flowers, happy birds and pleasant people, this is what spring has to offer. For dinner, I made broccoli shrimp fry using fresh shrimp.

Rainy weather= Moody Me. I know lately I’ve been starting most of my post referring about the weather, obviously weather influences our mood. I made an early dinner today, this is the first time I used dried chow mein noodles. I absolutely loved this dish, with shrimp it tasted great.

Had an amazing day and the weather cooperated well. It was 51 F today and was sunny, bright with soothing breeze. Came home and right away made this shrimp dish. This could be enjoyed by itself or along with noodles or rice. One of the best shrimp dishes I’ve ever made, aromatic and flavorful. After a delicious dinner I went for a walk with my friend and felt so relieved. I would love to have days like this quite often.

Even though it wasn’t a great day, it was a lucky day as I won a coffee from Tim Hortons. For dinner, I made a Sesame Shrimp salad. This is a very easy to make recipe and it tasted great.

I am dead tired and I just want to go inside the comforter and sleep like there is no tomorrow. Today has been a long day for me. I had spent a lot of time in my kitchen making a coconut cake and for dinner I made spicy shrimp roast, cauli rice and roasted eggplant. Wishing everyone a Happy Valentine’s day!

Day 2 – Thai Red Curry Shrimp Noodles

Thai Red Curry Shrimp Noodles

My favorite way of devouring Noodles:  Shrimp and Vegetables sauteed in Thai Red Curry Paste and Coconut milk. It’s aromatic and creamy.

Recipe:

  • In a wok cook deveined shrimp and veggies (beans, carrot, peas, celery etc) till tender.
  • Add 3 tbsp red curry paste to it and stir fry for 2 minutes.
  • Add 1 cup coconut milk, cook for a few minutes.
  • Add cooked vermicelli into it and combine well.
  • Garnish with green onions and serve hot.
