My freezer is full of sea food, I have to finish it as soon as possible. For dinner, made a stir fry by combining squid, mussels and mushrooms.

What an amazing day it was, felt more like summer today. For lunch, I made pan fried salmon in coconut oil, tapioca coconut stir fry and a spicy and tangy sauce. We had this for dinner as well.

Gearing up for Thanksgiving. For dinner, made squid stir fry and cauliflower stir fry, yes I didn’t want to spent much time cooking dinner.

It’s officially Fall and the nature is getting into its yellow, orange and red attire. For dinner, it was squid, made a green curry squid and combined with chow mein for me and spinach noodles (gluten free) for hubby.

It was such a rewarding day! In the evening, I plucked yellow tomatoes from my garden, baked it with homegrown oregano and sprinkled with parmesan cheese. Also, made basil bean mussel stir fry.


Day 194 – Squid Green Curry

I cannot believe it’s Wednesday today, that was fast. I was drowned in work today and so relaxed for some time in the evening. For dinner, I made squid green curry, used green curry paste made by my favorite food brand “Thai Kitchen”. It was delicious!

Recipe: 

Ingredients:

  • Squid, cut into cubes, frozen or fresh- 2 cups or 3 fresh squids
  • Carrot, cut long- 2 no’s
  • Celery, cut long- 1 stalk
  • Onions- 1
  • Thai Kitchen Green Curry Paste- 3 tbsp
  • Coconut Milk- 1/2 cup

Preparation:

  1. Cook the onions, veggies and squid till they are tender.
  2. Add Thai Green curry paste (add more if you need more spice), combine well and cook for a minute.
  3. Add 1/2 cup coconut milk or more if needed and cook for 2 minutes till it thickens.
  4. Serve hot with rice or by itself.

Do we have a stronger competitor than TIME??? I don’t think so yet we compete against each other. After an early squid chow mein dinner, my mind wandered through such thoughts.

Don’t ask me how my weekend was. The laziest weekend ever, blaming on the rainy weather. Just wondering, why does it have to rain most of the time during spring??? Hmm, the good thing was I just lazed at home watching TV, browsing etc. I guess unproductive weekends should be welcomed once in a while. I made mussel biryani for lunch and had that for dinner as well.

Wrapping up the beautiful weekend with Tom Yum soup and my favorite part is it has crab in it…Happy Mother’s day! Hope all the mom’s out there had a wonderful Mother’s day and a great weekend as well. It was in deed a beautiful weekend for me, weather cooperated so well giving us enough sunshine and warmth. My husband and I did some outdoor activities like motorcycle riding and biking. Now, looking forward to a great week, hopefully it won’t rain much this week.

Day 111 - Sushi

Sushi night! It’s true “never say never”. When I came to know about sushi and the fact that it has raw fish in it made me say I’ll never try sushi, then when I saw my hubby gobbling up with so much craze I got an urge to try it. After a couple of tries I nodded with approval, then I became a fan of it, a die hard fan and now a slave of it. Though I love all kinds, I would say my favorite is crispy spicy salmon.

It was a windy day! This evening I had my first bike ride and I learned to ride by myself in just an hour, reason: I had an awesome coach, my hubby. When it was time to cook dinner I got creative. First I made mussel roast and stuffed them into rice dumplings and steamed them after wrapping it in banana leaf. It was absolutely delicious, my husband and I gobbled them up in no time.

Day 89 - Eggplant Chicken and Squid Stir Fry

A day of celebration for all Indians as India entered the cricket world cup final. It was in deed a proud moment. I had so much fun at work watching, cheering and teaching cricket to all my non-Indian co-workers. All I had to talk about for the past one week was about the cricket semi final and I am so glad that we won. Now, looking forward to the final on Saturday, keeping my fingers crossed. For dinner, I made two dishes: one with chicken and the other with squid. Eggplant chicken and Kerala style Squid stir fry.

I cannot get enough of shell fish! My intense love for mussel started right from the moment I had a bite of it, that must have been many many years ago and I am still a die hard fan of it. I was so excited to make tonight’s dinner as Mussel roast was on my menu and it was served with Wheat Crepes. For a spicy kick I also had homemade mango pickle that I had made last night.
