I had a long day, had to work till late evening. Whenever I wanted to make an easy dinner, pasta comes to rescue me. Combined the paste with chicken, spinach and store bought mushroom pasta sauce.

I had a craving for pakoras and so made spinach pakoras along with a spicy yogurt sauce. For dinner, made sour cream veggie pasta. My new addiction is sour cream, I can have it with almost everything especially with pasta.

Sour Cream Veggie Pasta Recipe

Ingredients

  • Pasta, fusilli – 1/2 packet
  • Broccoli florets- 1 1/2 cups
  • Mushroom, sliced- 1 1/2 cups
  • Spinach- 1 1/2 cups
  • Celery, cut long thin- 2 stalks
  • Oregano, dried- 3 tsp
  • Sour cream- 1 1/2 cups
  • Ground pepper- 1/2 tsp
  • Salt- to taste

Preparation

  1. Cook pasta in boiling water seasoned with little salt, drain and keep aside.
  2. Cook the veggies in a pan till tender, don’t over cook them.
  3. Season with oregano, ground pepper and salt.
  4. Pour sour cream and combine well, let cook for a few minutes.
  5. Add pasta and combine well.
  6. If the pasta is too dry, add some more sour cream and cook it.
  7. Remove from the heat and serve hot.

Looks like summer is at its peak, having really hot days. Being a winter person, I cannot handle the heat. If I turn off the air conditioning for a few minutes, I get dizzy and I start freaking out. Hopefully I’ll feel better in a few days as my body get used to the sun and the heat. Late this evening, I baked a “chocolate almond upside-down cake” to surprise my friend on her birthday tomorrow, I can’t wait for the dawn to break. Since I was busy with baking, I made a quick veggie pasta for dinner.

How to make the best scrambled eggs? My answer would be make the worst omelette and you get the perfect scrambled eggs. I am an expert when it comes to making the best scrambled eggs. For dinner, I turned “Pasta Omelette”  into “Pasta scrambled eggs”. My hubby got confused seeing the pasta scrambled eggs and he was curious enough: were you trying to make omelette? Me: Nope, pasta scrambled eggs right from the start :P Him: Whatever and gobbled up. In my mind: Whoever came up with the name scrambled eggs is a genius! Have a great weekend everyone!

I was a bit frustrated today and to ease off I entered my kitchen and cooked. Its been a long time since I made Palada or Rice Crepes, my mom makes this on special days. Palada and Caramelized Onion Beef Roast along with Saffron Pasta Pudding helped to cheer me up.

Why do weekends always end so fast??? I had a really lazy weekend, most of the time I was glued to my couch watching movies, browsing and listening to music. I felt so hard to move from my couch and to make tonight’s dinner. When the clock ticked 8 pm, I had no other choice but push myself to the kitchen. When I started cooking, the warmth from the heat and the aroma from the ingredients opened my senses and suddenly I regained my passion. Made spring onion chicken and corn pasta.

Pastas come to rescue me during days of laziness. Had a super lazy Sunday and in the evening quickly whipped up Vegetable Fusilli pasta in Schezwan sauce. I am glad I had a veggie dish for dinner.


Day 1 – Spinach Chicken Pasta

Day 1 – Spinach Chicken Pasta

My first dinner of 2011: A healthy spinach chicken served over Fusilli Pasta.

Recipe:

  • Spinach- 1/2 bag
  1. Add spinach to boiling water and cook for 2 minutes.
  2. Drain the spinach and puree it into a thick paste.

For cooking chicken: 

  • Oil- 2 tbsp
  • Whole Garam masala- 2 cardamom, 2 cloves, 1 inch cinnamon
  • Cumin seeds- 1/2 tsp
  • Garlic chopped- 2 cloves
  • Onion, chopped- 1
  • Ginger-garlic paste- 1 tbsp
  • Tomatoes chopped – 1
  • Chicken boneless cubed- 1/2 pound
  • Salt- to taste
Ground Spices:
  • Chilly powder- 1/2 tsp
  • Turmeric powder- 1/4 tsp
  • Cumin powder- 1 tsp
  • Coriander powder- 1 tsp
  • Fenugreek leaves- 2 tsp
  • Ground pepper- 1/4 tsp
Preparation:
  • In a large pan, add oil, put whole garam masala, cumin seeds and saute for a second.
  • Add garlic, saute for a minute.
  • Add onions and cook till tender.
  • Add salt to taste.
  • Add ginger-garlic paste, cook for 2 minutes.
  • Now, add the tomatoes and cook till it gets mashed.
  • Add the chicken and cook covered till it turns tender and well done.
  • Now, add all the ground spices and cook for a few minutes.
  • Pour the pureed spinach to the mixture and cook for 5 minutes.
  • Add 1/4 tsp ground pepper, combine well.
  • Taste and add salt if needed.
  • Cook pasta in boiling water along with little salt till tender, drain the water.
  • Spread pasta on a plate and pour the spinach chicken over the pasta.
  • Serve hot.
