Day 77 – Mackerel Fry and Spicy Tangy Tapioca Stir fry

Day 77 - Mackerel Fry and Spicy Tangy Tapioca Stir fry

For me, Fish fry and Tapioca= pure bliss!!!

In winter I usually avoid frying fish, even with the exhaust turned on and with constant spraying of air freshener, fish smell will linger in the house for a few days. Even if I somehow manage to get along with this smell, this is truly not tolerated by my husband. Today was such a warm beautiful day and I had been looking for such a day for so long. I absolutely did take advantage of this day and made fish fry. Mackerel was my catch of the day. With all the windows and doors open, I started frying mackerel. To go with it I also made a spicy, tangy tapioca stir fry. I’ll be posting the recipe soon on my cooking website.

Day 70 – Pan Fried Pollock Over Spicy Veggie Bed

Day 70 - Fried Pollock Fillet

What a day!!! Last night, almost all the snow had melted and it was drizzling, which gave hopes of spring and warm weather. This morning when I woke up, I witnessed a totally different view in my backyard: blizzard and piles of snow. As I was whining about the snow storm, I came to know about the heart breaking news of massive earthquake that hit Japan, this literally put a seal on my mouth. My prayers to Japan!

It’s been a while since I had fish and so for tonight’s dinner I made sure to make fish. I pan fried Pollock fillet and served it on a bed of spicy veggies. It was Yum!

Day 62 – Tuna Puffs and Bird’s Nest Tuna Cutlet

Day 62 - Tuna Puffs and Bird's Nest Tuna Cutlet

I would say this was one of my best dinners. I love to have puffa almost everyday, only thing that is stopping me from having it is the insanely high saturated fat it has :( For tonight’s dinner: I first made tuna filling, stuffed it into puff pastry and with the rest of the filling I made cutlets. There is a twist in this cutlet, after dipping the cutlet in beaten eg, I coated it with vermicelli instead of bread crumbs which gave it the bird’s nest look. Well, my mom shared this idea with me when I talked to her the other day :)

Day 36 – Baked Fennel Red Snapper

Day 36 - Baked Fennel Red Snapper

Lazy Saturday! When the snow came down real heavy and spoiled our evening getaway we got even more lazier. When it came to make dinner I couldn’t think of anything but baking and so baked my favorite Red snapper fish along with fennel and Orange. It was a very mild flavored dish, next time if I make this dish I’ll make it little more spicy. For me, I prefer my fish spicy.

Day 31 – Pomfret Fish Fry and Lotus Root Stir Fry

Day 31- Pomfret Fish Fry and Lotus Root Stir Fry

Phewww, that was one heck of a day. I was seriously not in the mood to make dinner and I tried my best to slack off. But when I saw the Lotus roots sitting cozy inside the refrigerator, I was tempted to take that out and to make something with that. After searching Google about lotus root cooking methods, I kinda got some ideas about how to deal with it. I first tried deep frying it after seasoning it with a few spices. I was so anxious to taste it, one bite of it and I fell head over heels for it. Loved the crispy fried lotus roots and finished it as soon as it came out of the oil. I had some more roots and hence made a stir fry with it. Pomfret fish fry was the other dish. That was one simple yet delicious dinner I had.

Woohooo, I nailed it! I’ve successfully uploaded this month’s 31 dinner. I got a long way to go to make it Dinner 365!

Day 29 – Tapioca Fish Biryani

I got a lot of things done today and I am so happy about that. This noon, I had a produce shopping spree and came home with so many new veggies and other things to try out. Lotus root was one such veggie I bought from the Asian Super market. I still have no clue what to and how to cook with it, however I am amazed about its health benefits, so it’s definitely a good buy. I also bought a few pounds of Tapioca or Cassava or Yuca root. Tapioca is a staple food of Kerala, it’s pretty cheap and available all year round. Whenever I see good and fresh tapiocas I can hardly resist them. I also bought fresh King fish, my favorite fish. I was so excited to make tonight’s dinner combining tapioca and king fish. Kerala style Tapioca Fish Biryani was the outcome and I loved it!
