What a great day! I was featured on Western Gazette today. Hopefully I will be submitting more recipes for the gazette. While making dinner, I actually combined everything that was in my refrigerator and pantry. I made a medley of mixed veggies, tuna, beans and brown rice, it was quite filling and healthy.

One of the hottest day so far and tomorrow is gonna be a scorcher. I couldn’t even stand on my backyard it was scorching hot. I had to wait to cool a bit to water my garden. I have not been doing any outdoor activities lately as I get exhausted if I stand outside for a while, so I am trying to hide from the heat. For dinner, I made Goan fish curry served with red rice. Also, I made Mango chammanthi or raw mango combined with grated coconut and fish fry. It was a scrumptious dinner.

Goan Fish Curry Recipe

Mango Chammanthi:

Ingredients:

  • Grated Coconut- 1 cup
  • Raw Mango cut small- 1
  • Green Chillies-2, depending upon how spicy you want
  • Curry leaves- 5 leaves
  • Ginger grated- 1 inch slice
  • Salt- 1/4 tsp

Preparation:

  1. In a blender combine all the ingredients to a coarse paste, add very little water if needed.

Fish Fry:

  • I used the ground coconut mixture ( 1/4 cup) used for making the Goan fish curry to marinate the fish.
  • Let stand for 15 minutes and fry it in oil till golden brown.

Went to the beach today and had an adventurous motorcycle ride in the rain while coming back. All of a sudden strong dark clouds carpeted the sky, in a split of a second they poured down into heavy rain, the sky thundered and the lightning flashed. We sheltered in a gas station for a while and the rain didn’t seem to slow down. My hubby started the motorcycle, asked me to hop in, I did; asked me to hold him tight, I did and he looked at me and said: you are going to be safe with me, those words took all the fear out of me and we enjoyed the ride in the rain! For dinner, we had mussel chow mein that I had made for lunch.

Mussel Chow Mein Recipe : Follow the same recipe and use mussel instead of shrimp.

Yay, all geared up for long weekend! For dinner, I fried King fish and served it on Okra gravy.

We are having calm hot days and totally crazy nights with thunderstorms and heavy rain. I’ve been waiting for summer to make this curry with dried anchovies, as I don’t want to have the fish smell lingered to my house during winter. I had to open all the windows and doors along with the exhaust to ward off all the fish smell. Dried fish curries are very common in my hometown and it has been a delicacy and comfort food for many people. Believe me, it’s been ages since I had this dish. This time when I saw dried anchovies at the Asian superstore, I couldn’t resist buying it and finally it was today that I made dried anchovies in coconut gravy and served it with white rice. My hubby doesn’t like anchovies let alone dried ones, so he had grilled steak. While having this, I kept saying to my hubby “You are missing something very delicious”. And he kept staring at me when I kept licking my fingers and making the Hmm sound, this dish is in deed a true delicacy!

Recipe

Adopted from this Original Recipe

Ingredients:

  • Dry Anchovies- 1 cup
  • Oil- 2 tbsp
  • Chilly powder- 1 1/2 tsp
  • Turmeric powder- 1/2 tsp
  • Ginger, minced - 2 tsp
  • Onion, chopped - 1
  • Tomato, chopped-1
  • Curry leaves- 1 sprig
  • Water- 1/4 cup

To grind:

  • Grated coconut- 1/2 cup
  • Yogurt- 3 tbsp
  • Dried anchovies- 4 no’s
Preparation:
  1. Shallow fry the dry anchovies in little oil and keep aside.
  2. Heat a pan, add oil, chilly powder, turmeric powder, saute for a second without burning it.
  3. Add minced ginger, chopped onion and tomato, saute till tomato gets mashed up.
  4. In a blender, grind above mentioned ingredients to grind to a smooth paste.
  5. Add this coconut paste to onion mixture, cook for 3 minutes.
  6. Add fried anchovies, curry leaves and water.
  7. Cook covered for 5 minutes.
  8. Serve with white or red rice.

First of all, let me thanks Mother Nature for giving us a beautiful sunny Saturday. I had a highly productive day building my veggie garden and beautifying my backyard. My man helped me with all the hard chores. We felt content after all the hard work. Today, I made a typical Kerala style lunch: Fish in roasted coconut gravy, fish fry, Tapioca thoran and Rice. We had this even for dinner.

Fish Fry Recipe:

Ingredients:

  • Sardine fish- 6 no’s
  • Chilly powder- 1 1/2 tsp
  • Turmeric powder- 1/4 tsp
  • Ginger-garlic paste- 2 tsp
  • Ground pepper- 1/4 tsp
  • Salt- to taste
Preparation:
  1. Clean the fish and put gashes on it.
  2. Marinate the fish with chilly powder, turmeric powder, ginger-garlic paste, ground pepper and salt.
  3. Fy in oil till golden brown.

It’s been a long time since I made homemade chapati, I get lazy when it comes to making chapati’s from scratch as it involves kneading the dough, rolling the dough and then cooking it. Anyway, this evening I overcame my laziness and made chapati for dinner. To go with it I made Kerala style king fish moli ie, fish in coconut milk.

Weekend is here and I feel so excited. It felt like a long week for me, so looking forward to a relaxing weekend. This evening the weather was crazy,it rained heavily  accompanied by thunderstorms and lightning. It’s Friday and as usual my refrigerator was literally empty, I was out of poultry and veggies. Only thing I had was a few canned tuna, hence used that for making dinner. Made tuna stuffed Mani Puttu. Mani puttu is prepared using rice flour dough, made into noodle shapes using Idiyappam maker and steam cooked in puttu maker. It came out really good and the tuna stuffing tasted delicious.

Typical Kerala meal! I had tapioca and mackerel fish, what more do I need to make an authentic Kerala style dinner? My favorite: boiled tapioca stir fried in coconut, topped with seasoning and spicy tangy mackerel fish curry. This is what I call a dinner, YUMMMM!!!

Day 93 – King fish Biryani

It’s officially spring, really??? This weather is in deed deceiving. It was all warm and sunny yesterday and today it was fairly good till noon. All of a sudden it started snowing heavily. Damn weather! I screamed. Honestly, I am done with snow and want some sunshine. For today’s lunch, I made a huge pot of king fish biryani. Even for dinner I had biryani, which tasted much better than I had for lunch.

A day for celebration as India won the World cup cricket final. It was such an exciting match against Srilanka and I experienced a few hours of adrenaline rush towards the end of the game. Congratulations to team India for a well deserved victory. I had a late lunch and so had some leftovers from lunch, had that for dinner as well. Made Kerala style Anchovy Mango curry, anchovy fry which was served along with red rice. One thing I love about winter coming to an end is that I can make more fish dishes, with the windows/doors wide open and not having the fish smell lingering to the house.

It was a long, tiring yet a happy day. My friends came over for dinner and obviously I cooked all day. Made Tuna cutlet, Dragon chicken and BroccoliBarbecued Rosemary Chicken drummettes, Ghee Rice, Naan (store bought)  and Orange Panna Cotta.

For me, Fish fry and Tapioca= pure bliss!!!

In winter I usually avoid frying fish, even with the exhaust turned on and with constant spraying of air freshener, fish smell will linger in the house for a few days. Even if I somehow manage to get along with this smell, this is truly not tolerated by my husband. Today was such a warm beautiful day and I had been looking for such a day for so long. I absolutely did take advantage of this day and made fish fry. Mackerel was my catch of the day. With all the windows and doors open, I started frying mackerel. To go with it I also made a spicy, tangy tapioca stir fry. I’ll be posting the recipe soon on my cooking website.

What a day!!! Last night, almost all the snow had melted and it was drizzling, which gave hopes of spring and warm weather. This morning when I woke up, I witnessed a totally different view in my backyard: blizzard and piles of snow. As I was whining about the snow storm, I came to know about the heart breaking news of massive earthquake that hit Japan, this literally put a seal on my mouth. My prayers to Japan!

It’s been a while since I had fish and so for tonight’s dinner I made sure to make fish. I pan fried Pollock fillet and served it on a bed of spicy veggies. It was Yum!
