I had to force myself to the kitchen to cook dinner. My goal was to make a cauliflower curry and ended up making mashed cauliflower. Served with gluten free crepes and sunny side-up egg.

Long work day for me and so hubby had to make the dinner. His intention was to make egg roast, he even had my recipe open on his laptop. Apparently in the middle of his cooking he ditched my recipe and created his own mashed potato egg roast. I was way too hungry and just appreciated his creativity :P

I had been thinking of making egg roast for so long, and it happened tonight. I couldn’t think of anything but poori to serve along with egg roast. Poori and egg roast along with radish stir fry made a delicious dinner for tonight.

Day 218 - Veggie Crepes and Apple Crumble Cake

My day was going good till I saw some of the cucumbers were missing from my garden, the damn squirrel has been driving me crazy for so long. I don’t think I can enjoy any of the cucumbers from my garden, before it grows the squirrel would have enjoyed it, sigh. For dinner, I made veggie crepes and gluten free apple crumble cake.


Apple Crumble Cake recipe

Veggie Crepes recipe:

For making crepes:


  • All purpose flour- 1 cup
  • Egg- 1
  • Milk- 1/2 cup
  • Water- 3/4 cup
  • Salt- to taste

For filling:

  • Oil- 1 tbsp
  • Mixed veggies, chopped small- 2 cups
  • Garlic, minced- 1 tsp
  • Soy sauce- 2 tbsp
  • Chili paste- 1/2 tsp
  • Tomato sauce- 1/3 cup
  • Ground pepper- 1/4 tsp
  • Salt- to taste

Other ingredients:

  • Cheese, grated- 1 1/2 cups


  1. Place a pan over medium heat, add oil, add the veggies and garlic, saute till the veggies turn tender.
  2. Add soy sauce, chilli paste, ground pepper and salt, combine well.
  3. Add tomato sauce and cook for 2 minutes.
  4. Remove from the heat and keep aside.

For making crepes:

  1. In a blender, combine all the ingredients for making the crepes to a thick batter.
  2. If the batter is too thick add water to thin it down.
  3. Heat a cast iron skillet or non-stick cooking pan, grease it with little oil.
  4. Pour a ladle of batter on the pan, using the back of the spoon spread the batter to a round shape.
  5. When the bottom side turns light golden in color, flip over and cook the other side to golden color too.
  6. Remove from the pan.
Baking the crepes:
  1. Place one spoonful of the prepared veggies on the center of the crepe, fold both the ends.
  2. Repeat this with other crepes too.
  3. Place the stuffed crepes on a glass baking dish and sprinkle the cheese over it.
  4. Preheat the oven to 350F.
  5. Bake the crepes for 10 minutes, till the cheese turns golden in color.
  6. Remove from the oven and serve.

This evening while thinking about some of the dishes that I had when I was with my mom and never cared to make it in my kitchen, one of the dishes that flashed through my mind was Poached Egg korma. This is my mom’s speciality dish and after making it for tonight’s dinner I learned from my husband that this is one of his favorite egg dishes. I am so glad that I finally made this. I had the korma with folded chapati.


Poached Egg Korma Recipe

Folded Chapati Recipe:


  • Wheat flour- 1 1/2 cups
  • Water- 1 cup
  • Salt- to taste
  • Ghee- to spread on chapati
  • Wheat flour- 1/4 cup to sprinkle while rolling the dough


  1. Boil the water in a saucepan, add salt and slowly add 1 1/2 cups flour, combine using a wooden spoon.
  2. Remove from the heat and let the dough cool down a bit.
  3. Knead the dough when it is still warm into a smooth dough.
  4. Keep aside for 5 minutes.
  5. Make small balls out of the kneaded dough.
  6. Place the dough on a wooden board.
  7. Sprinkle flour over it and using a rolling pin roll to medium round shape.
  8. Fold the two ends of the rolled dough and then fold them again making into a little square box shape.
  9. Flatten it and sprinkle some flour over it and roll it into square shape.
  10. Heat a cast iron skillet ot non-stick pan over medium heat.
  11. Add 1/2 tsp ghee on the skillet when it gets hot, place the rolled dough over it.
  12. When the bottom side gets slightly cooked, flip over.
  13. Drizzle 1/2 tsp ghee over it and let golden brown spots form on the bottom side, flip over.
  14. Gently press the spatula on the ends of the dough, it will puff up.
  15. Flip over one more time and cook for a second, remove from the pan.
  16. Serve warm along with your favorite curry.

Grilling on a chilly evening. The main attraction of this time’s grilling is that I even grilled eggs, not directly on the grill though. I placed an aluminum foil over the grill, sprayed with cooking spray, cracked the eggs on it, covered the grill and when the eggs got cooked, drizzled barbecue sauce over it and served it on top of grilled chicken. At first my husband wasn’t happy about the idea of grilling eggs, when he had a taste of grilled eggs he changed his mind and requested for another one. It tasted incredible along with the sauce.

How to make the best scrambled eggs? My answer would be make the worst omelette and you get the perfect scrambled eggs. I am an expert when it comes to making the best scrambled eggs. For dinner, I turned “Pasta Omelette”  into “Pasta scrambled eggs”. My hubby got confused seeing the pasta scrambled eggs and he was curious enough: were you trying to make omelette? Me: Nope, pasta scrambled eggs right from the start :P Him: Whatever and gobbled up. In my mind: Whoever came up with the name scrambled eggs is a genius! Have a great weekend everyone!

I had a very light lunch this afternoon and so I wasn’t surprised when I had the call for food at 4 pm. I was literally thinking about all yummy food till I got home. As I reached home, I started thinking about what to make for dinner. I even had the temptation to dial the phone and get the dinner home delivered. Before I could do that, an idea popped out of my mind. To make Idiyappam in less than 15 minutes using cooked Rice Vermicelli and to have it with Poached Egg Curry.
