Day 334 – Quesapita

I am juggling between way too many things these days. So, I tend to make quick fix dinners rather than spending too much time in the kitchen. For dinner, made quesadilla, since I used pita bread instead of tortilla I had to rename this dish to quesapita.
Recipe: For making 1 quesapita
Ingredients:
- Cooked chicken breast- 1
- Taco sauce- 4 tbsp
- Pickled Jalapeno- few slices
- Cheddar cheese
- Pita bread- 1 large
Preparation:
- Season chicken breast with ground pepper and salt, pan fry in 1 tbsp olive oil till it has cooked well.
- Dice the cooked chicken to small.
- Add 2 tbsp of taco sauce to the cooked diced chicken and stir fry till light golden in color.
- Place a non-stick pan over low heat.
- Place pita bread on the pan, spread 2 tbsp taco sauce over the pita, top with cooked diced chicken, pickled jalapenos and generously sprinkle cheese over it.
- As the pita warms up the cheese will melt.
- When the cheese starts to melt, fold the pita into semi circle shape.
- Heat for some more time till the pita has glued together.
- Don’t over heat the pita as it will turn crispy.
- Remove from the heat, cut the pita into halves and serve with your favorite salad.
- Increase the amount of ingredients and make more.
Day 333 – Quinoa with Butternut Squash and spinach topped with Chicken

It has been raining non stop since last night. I am not a huge rain lover as I feel depressed. For dinner, made quinoa combined with butternut squash and spinach, topped with pan fried chicken.
Day 326 – Healthy Aromatic Chicken Soup and Cashew Chicken stir fry

Freezing cold and it was stormy. I was so in need of hot soup to warm up, made aromatic chicken soup in the healthiest way. And made cashew chicken as the main dish.
Day 325 – Chicken Pasta

Phewww…I am literally clueless, having a major traffic jam in my head. For dinner, had a quick fix chicken pasta.
Day 324 – Cashew Chicken

A very rich and scrumptious cashew chicken was our dinner, served with roti.
Day 320 – Oyster Chicken Pita

I like to go shopping on a week day rather on a weekend, this evening I was rushing to do shopping. Had leftover oyster chicken, and I wrapped it in a pita and also added jalapeno and salsa to it.
Day 319 – Oyster Chicken and Crepes

Lousy day! Made oyster chicken and gluten free crepes for dinner.
Day 316 – Grated Carrot Chicken

I had to work this evening so hubby took over the kitchen and he had a lot of fun. I came home hungry and felt so happy to see grated carrot chicken and white rice ready on the dining table. Whenever I have Indian curry with rice, I love to have pickle as a side, the spicy kick from the pickle makes everything taste delicious.
Day 313 – T.G.I. Friday’s Sizzling Chicken

Many a times after I dine at a restaurant, I felt like going into the restaurant kitchen and some how steal the recipes from the chef. Looks like I don’t have to do that now, as I’ve received a cookbook called “America’s most wanted recipes”. It has the recipes for almost all famous restaurant chains. For dinner, I tried the sizzling chicken of TGIF. I was surprised how flavorful this dish tasted, as it only called for a very few ingredients. Sizzling chicken topped on sauteed peppers and mashed potatoes.
Day 311 – Baked Mushroom, Baked Mint Chicken, Scrambled Egg Okra

Had a long day and felt so tired. For dinner, baked chicken and mushrooms, also made scrambled egg okra.
Day 307 – Leftover Quinoa Chicken Biryani

I had a bowl full of leftover quinoa chicken biryani that I had made last night. So, for dinner I skipped making anything new and had the leftover quinoa biryani. I had a relaxing evening.
Day 306 – Quinoa Biryani

It was a weird day, I had tons of things to be done yet I felt bored. Reading journals and writing reports not so much fun. At least I wanted to do something exciting for dinner and so made quinoa chicken biryani. Instead of rice, I added quinoa.
Day 304 – Schezwan Baked Chicken and Veggies

Trick or Treat! I am way too exhausted after tricking and treating the kids in my neighborhood. Making the quickest dinner possible was in my mind, couldn’t think of anything but baking. Baked chicken after marinating it with Schezwan sauce and stir fried the veggies.
Day 303 – Butter Chicken

Winding up a beautiful Sunday with Butter chicken. I make this quite often as this beats all the restaurant style ones.
Day 300 – Orange Chicken Salad

Here is my 300th dinner. I cannot believe there are only 65 more days to go, that’s unbelievably fast! Made a flavorful orange chicken and served with salad.
Day 299 – Baked Chicken Legs and Veggies

It’s not yet winter but it has started to feel like so. For dinner, baked chicken legs after marinating them in yogurt and Indian spices on a bed of carrot and celery. After having this I had a sweet craving and so made mango pudding as well.
Day 297 – Chicken Normandy, Saffron Polenta and Sesame Potato Salad

I had a lovely Monday as I wasn’t hit by Monday blues- too weird
. For dinner, I made totally unique and different dishes that I’ve never tried before. Made Chicken Normandy- a French dish, Polenta- an Italian dish and Sesame Potato Salad in yogurt sauce totally my way. It was such a delicious dinner.
Day 296 – Cornmeal Crepes, Taco Chicken and Grilled Corn

A beautiful Sunday has come to an end. It was very sunny today and I grilled corn this evening. For dinner, made taco chicken and cornmeal crepes.
Day 290 – Chicken-Pepper Masala and Cornmeal Crepes

Week just started and I am already feeling exhausted. For dinner, made Chicken-Pepper masala using a store bought kadai masala mix. I tried making gluten free crepes with corn meal and rice flour, it came out pretty good even though it was slightly crispy.
Day 288 – Chicken and Mashed Cheddar Potatoes

Had some work tonight so hubby took over the kitchen and as usual made his favorite dishes: Chicken and mashed potatoes. I am impressed that he’s trying different variations of mashed potatoes each time he makes it, this time he added cheddar cheese to the mashed potatoes and I loved it.
Day 287 – Chicken in Green Pepper Sauce and Puttu

Yay Friday! For dinner, made chicken in green pepper sauce and served with Puttu.
Day 285 – Chicken in Creamy Mustard Sauce and Potato Stir Fry

It started as a crazy day today and ended crazy too, so no complains at least it was consistent. For dinner, made a really delicious dish. Pan fried the chicken and poured creamy mustard sauce over it, served it potato stir fry. It was easy to make and delicious.
