Wohoooo, here is my 364th dinner, just one more day to wrap up this year. I made tomato chicken and served with basmati rice.

Finally it started to snow and it’s been snowing like crazy. For dinner had green curry chicken noodles.

Today was the foggiest day ever, even in the after noon it was very foggy and it kept drizzling the whole day. For dinner, made broccoli chicken.

Last night watched The Dr OZ show, in that they showed how to prepare braised chicken which is good for winter. I did some variation and made braised aromatic chicken. It tasted so good and aromatic, after having the chicken and the soup I felt rejuvenated.

Is it me or is the end of the year??? I’ve been slacking off on almost everything except shopping. Had a long day, wrapped up with some Asian style chicken and veggie vermicelli.

Had some leftover shepherd’s pie, hubby had that and for me I made chicken salad, use taco seasoning to marinate the chicken.

I am glad that this day came to an end. I had to work in the afternoon, final exams are going on at the university and I had to proctor for 3 long hours. It’s not a fun thing staring at the students and walk around non-stop. For dinner, made Ginger chicken¬†drummettes and served with microwaved broccoli.

I can’t believe it’s December as we are having a beautiful weather, last year around this time we were snowed in. For dinner, I had some leftover oyster cabbage noodles, made pan fried cajun chicken and served with the noodles.

For dinner, combined the leftover chicken and mung bean with cheese and served with pita bread and sour cream.

Honestly, I hate this picture, which was taken very casually. For dinner, baked chicken marinated with herbs and buttermilk, served over mung bean and swiss chard.

Had shawarma chicken, rice and roasted potatoes for dinner.


Day 334 – Quesapita

I am juggling between way too many things these days. So, I tend to make quick fix dinners rather than spending too much time in the kitchen. For dinner, made quesadilla, since I used pita bread instead of tortilla I had to rename this dish to quesapita.

Recipe: For making 1 quesapita

Ingredients:

  • Cooked chicken breast- 1
  • Taco sauce- 4 tbsp
  • Pickled Jalapeno- few slices
  • Cheddar cheese
  • Pita bread- 1 large

Preparation:

  1. Season chicken breast with ground pepper and salt, pan fry in 1 tbsp olive oil till it has cooked well.
  2. Dice the cooked chicken to small.
  3. Add 2 tbsp of taco sauce to the cooked diced chicken and stir fry till light golden in color.
  4. Place a non-stick pan over low heat.
  5. Place pita bread on the pan, spread 2 tbsp taco sauce over the pita, top with cooked diced chicken, pickled jalapenos and generously sprinkle cheese over it.
  6. As the pita warms up the cheese will melt.
  7. When the cheese starts to melt, fold the pita into semi circle shape.
  8. Heat for some more time till the pita has glued together.
  9. Don’t over heat the pita as it will turn crispy.
  10. Remove from the heat, cut the pita into halves and serve with your favorite salad.
  11. Increase the amount of ingredients and make more.

It has been raining non stop since last night. I am not a huge rain lover as I feel depressed. For dinner, made quinoa combined with butternut squash and spinach, topped with pan fried chicken.

Freezing cold and it was stormy. I was so in need of hot soup to warm up, made aromatic chicken soup in the healthiest way. And made cashew chicken as the main dish.

I like to go shopping on a week day rather on a weekend, this evening I was rushing to do shopping. Had leftover oyster chicken, and I wrapped it in a pita and also added jalapeno and salsa to it.

I had to work this evening so hubby took over the kitchen and he had a lot of fun. I came home hungry and felt so happy to see grated carrot chicken and white rice ready on the dining table. Whenever I have Indian curry with rice, I love to have pickle as a side, the spicy kick from the pickle makes everything taste delicious.
