It was such a beautiful day today, it’s almost mid of December and we didn’t have much snow showers yet still enjoying nice weather. Hubby is having potluck lunch at his workplace tomorrow and his choice was Shepherd’s Pie. Beef and mashed potatoes are two of his favorites so am not surprised by his pick. This evening, I was busy making shepherd’s pie. I made two pans of it, we couldn’t resist having it for tonight’s dinner as well. It did taste delicious. This was the dish I had taken for St Patrick’s day potluck organized by the foodie meetup in Omaha.

What a day!!! I successfully defended my first year research work and felt happy to be finally out of the whirlwind ride. I baked my favorite dates cake to celebrate and topped it with butter pecan ice cream. For dinner, made a Malaysian dish: Beef Rendang, it was really delicious.

I had this shaami Kabab at my cousin’s house during my last year trip to India. I instantly fell for this one and raved about this right away. After coming back, the taste of this kabab lingered to my mouth and I had to call my cousin to get the recipe. I had been wanting to try this for long and today I made it. Even though it’s made with ground beef you wouldn’t get the intense taste of the beef so even those who are not a huge fan of beef will enjoy this. My hubby who’s favorite dish is meat loaf commented that this one tasted much better than meat loaf.

It was unbelievably chilly today, felt like summer is over and fall has arrived. This evening I was reminded of grilling, so grilled steak and served it along with tomatoes from my garden.

Used store bought Asian barbecue sauce to marinate the steak.

Friday night and pizza, a truly marvelous combination. I made this pizza last night and had some leftovers so I had this for tonight’s dinner as well. I think I can have this pizza almost everyday, it was so delicious: the soft crust, the ground beef topping, veggies and the cheese. Yummmm…

Recipe:

Beef Roast

Ingredients:

For cooking beef:

  • Beef, stew cut-  1/2 pound
  • Ground pepper- 1/2 tsp
  • Turmeric powder- 1/8 tsp
  • Salt- 1/2 tsp
  • Water- 1/4 cup

For making roast:

  • Coconut oil- 2 tbsp
  • Onion, chopped small- 2 medium
  • Ginger, cut thin- 2 inch slice
  • Garlic, cut thin- 4 cloves
  • Green chilly, chopped- 1
  • Red whole dry chilly- 2 no’s
  • Cumin seeds- 1 tsp
  • Cilantro, chopped- 1 handful
  • Curry leaves- 1 sprig
  • Turmeric powder- 1/8 tsp
  • Chilly powder- 1 tsp
  • Coriander powder- 1 tsp
  • Ground pepper- 1/4 tsp
  • Tomato,chopped- 1
  • Water from cooked beef- 1/2 cup
  • Coconut milk, thick- 1/2 cup
  • Salt- as needed

Preparation:

  1. Combine beef along with ground pepper, turmeric powder and salt.
  2. Cook the beef  along with water in a pressur cooker till 3-4 whistles or until beef has cooked well.
  3. Drain the cooked beef and reserve the water from the cooked beef.
  4. Place a pan over medium heat, add coconut oil, add onion to it, add salt and saute till translucent.
  5. Now, add ginger, garlic, red dry chilly, cumin seeds, cilantro and curry leaves, saute till everything turns slight golden in color.
  6. Add turmeric powder, chilly powder, coriander powder and ground pepper to it, saute for a minute.
  7. Add tomato and cook till it gets mashed up.
  8. Now, add the cooked beef and water, let it come to a boil.
  9. Add coconut milk and cook till the gravy thickens.
  10. Taste and add salt accordingly.
  11. If you need more spice add ground pepper or chilly powder to it.
  12. Serve hot along with rice roti or rice.

It was a pleasant windy day, went biking in the evening and made ground beef veggie masala for dinner. I wanted to make it vegetarian, but for my hubby I had to add ground beef to this dish, else I have to deal with his sad puppy face :P

Recipe:

Ground beef and Veggie Masala

Ingredients:

  • Ground beef- 1/2 pound
  • Ginger-Garlic paste- 2 tsp
  • Tomato sauce (no salt added)- 1 1/2 cups
  • Kadhai Masala, store bought (Sanjeev Kapoor brand)- 3 tbsp
  • Water- to thin down the gravy
  • Oil- 2 tbsp
  • Cilantro, chopped-  1 handful

Veggies:

  • Carrot, cut small- 3 no’s
  • Broccoli, cut into florets- 1
  • Celery, cut small- 2 stalks
  • Mushroom, diced- 1/2 packet

Preparation:

  1. Place a pan over medium heat, add oil.
  2. Add ground beef and saute till it turns pale.
  3. Add ginger-garlic paste and saute for a few minutes.
  4. Now, add the veggies and 1/2 cup water, cook covered till veggies turn tender.
  5. Add kadhai masala and combine well.
  6. Now, add tomato sauce, cook for 3 minutes.
  7. Add some more water to thin down the gravy.
  8. Kadhai masala has salt in it, so you don’t need to add any salt. Taste and if needed addd salt.
  9. Let cook for 2-3 minutes.
  10. Sprinkle cilantro over it and remove from the heat.
  11. Keep it covered for 5 minutes.
  12. Serve warm with roti, pita bread or rice.

Quite a productive Monday, I am getting busier these days with my research work. Hubby made his favorite beef loaf for dinner.

Beef Loaf Recipe : Follow this recipe to make the beef loaf, you could even add chopped green pepper, carrot etc to the beef.

For making Sauce:

  • Ketchup- 1 cup
  • Brown sugar- 1/2 cup
  • Salt- to taste
Preparation:
  • Combine all these and heat in a saucepan.
  • Bake the beef loaf for 1o minutes, then coat the beef loaf with the sauce and bake till it’s done.
  • You could also top with sauce while serving.

Feels like I am back from a vacation, had a terrific weekend! Though I am too lazy to cook during weekends, by Sunday evening I’ll be reactivated and will be seen indulged in cooking and baking. Today I had a sudden craving for biryani, if not biryani I made ground beef couscous for dinner. It didn’t taste like biryani but it was close to that taste and unlike biryani this one was quite easy to make. Hope everyone had a great weekend!

Day 167 – Baked Beef Beans

Day 167 - Baked Beef Beans

Today we had a plant sale in my campus, so I bought more plants and planted in my garden. My hubby was in charge of making dinner and so I felt so relaxed. He made baked beef beans, it tasted delicious.

Recipe:

Ingredients:

  • Ground beef- 1/2 pound
  • onion, chopped- 1
  • Black beans, canned- 1
  • Red Kidney beans- 1
To combine:
  • 1/3 cup sugar
  • 1/3 cup packed brown sugar
  • 1/4 cup ketchup
  • 1/4 cup barbecue sauce
  • 1 tablespoon mustard sauce
  • 1/2 teaspoon pepper
  • 1/2 teaspoon chili powder
Preparation:
  1. In a large skillet, cook ground beef and onion until meat is done and onion is tender.
  2. Combine all the above mentioned ingredients and add this to meat mixture; mix well.
  3. Stir in black beans and red kidney beans to the ground beef mixture.
  4. Spread the mixture in a greased 2-1/2-qt. casserole.
  5. Bake, covered, at 350 degrees F for 1 hour or until heated through.

A very lazy cold Sunday! For dinner made salami chow mein for me and salami vermicelli for my hubby. It was delicious.

Recipe:

  • I followed the recipe for making shrimp chow mein, for making salami chow mein I added salami after slicing into round shape and slightly pan frying it without adding any oil.
  • You could add your favorite veggies to this.

It wasn’t a perfect day to grill. Do we really need a perfect day to grill??? For us, any day grilling is just fun. We had to put on our fleece and shoes to grill outside though as it was chilly and windy. We grilled steak and veggies: eggplant and banana peppers. The steak came out perfectly grilled and for the first time I ate without making any complaints like not done well, it’s not tender etc etc. Also, I love grilled banana peppers which gives the heat to the dish.

Recipe:

  • Used store bought barbecue sauce for marinating the steak and grilled it.
  • Sprinkle ground pepper and salt over egg plant and banana pepper, grill it.

Day 146 – Green Pepper Meat Loaf

Had a lovely day!!! My husband made his favorite meat loaf for dinner. It’s been a while since we had meat loaf and he was craving for it. He has become an expert in making meat loaf and this one tasted really good with the added green pepper along with the ground pepper, which forced me to eat more than I usually do.

Recipe:

The recipe is same as of Meat Loaf, also added green pepper to the ground beef.

For making Sauce:

  • Ketchup- 1 cup
  • Brown sugar- 1/2 cup
  • Salt- to taste
Preparation:
  • Combine all these and heat in a saucepan.

While thinking about Easter dishes, I saw “Appam and Beef stew” plated in front of me. To make this real I made these dishes this evening. In Kerala, these are the special dishes served on Easter.

Day 81 – Beef Roast and Palada

Day 81 - Palada, Beef Roast and Saffron Pasta Pudding

I was a bit frustrated today and to ease off I entered my kitchen and cooked. Its been a long time since I made Palada or Rice Crepes, my mom makes this on special days. Palada and Caramelized Onion Beef Roast along with Saffron Pasta Pudding helped to cheer me up.

Ok, now I have to agree that my husband is an expert in making meat loaf. He is getting better at it after each try and this one is the best so far.

Gosh! I cannot believe a week got over, it was so fast. For some reason these days I feel like days are flying in jet speed or should I say at the speed of light. Today has been a pretty good day for me and came home with a huge smile on my face. I instantly entered my kitchen to whip up some real dinner. Ground beef was my victim and made two dishes out of it: Lentil Beef Soup and Bird’s Nest Beef Cutlet ( I coated the cutlet with vermicelli which gave the fried cutlets the bird’s nest look and it was very crunchy).
