Day 25 – Falafel-Pita Bread, Veggie stir fry and Carrot Cake
Today has been a quite satisfying day for me. When you do something, even if it’s a small thing, if it has brought a smile on someone’s face and satisfies your heart you have all the right to be happy. I came home quite hungry and that reflected in my dinner as well. I wanted to make several dishes and ended up making Falafel (made patties using ground chick peas, grated carrot and spices), had to empty some of the veggies so made a stir fry with red pepper, beans and spinach, then popped the question: What’s for dessert? And the answer was “Carrot cake”. This was a pretty good dinner and I am FULL!!
Day 22 – Rice-Mung Bean Coconut Milk Soup and Uzhunnu Vada
After a video chat with my sister and niece, I curled up on the couch home sick and nostalgic. Oh ya, I get this kind of feeling quite often. On such days, I try my best to cheer myself up usually by making the foods that I had enjoyed with my family. Foods that are filled with memories, laughs, comfort and full of life. So this evening I decided to make a fried snack that could bring back those beautiful memories of my family and hometown. My husband and I emptied the entire plate in just one sitting, it was so good! I felt pretty tired after that and for dinner I made Rice-Mung bean coconut milk soup or Kanji topped with olives.
