Magical Friday is here. It was so freaking cold today that I ended up making shrimp sweet corn soup. For the main course, made Chicken and Veggie stir fry.

It’s officially Fall and the nature is getting into its yellow, orange and red attire. For dinner, it was squid, made a green curry squid and combined with chow mein for me and spinach noodles (gluten free) for hubby.

I don’t why but I truly feel like going somewhere very far away from everything, Sigh. For dinner, I made king fish fry and lentil carrot soup.

I had a long tiring day and my hubby made the dinner as I am way too tired to even think of dinner. He made sesame potato stir fry, it tasted really good.

Main course: Roasted Rock Lobster, Black Tiger Shrimp & Grilled Butterfish with oven roasted local fingerling potatoes and a fine herb & garlic butter foam.

Dessert: Italian vanilla bean and coconut Ice cream.

Monday Date night with hubby at Blackfriars. This was the first time I had artichoke soup, I was expecting more of a creamy taste but this soup had a slightly sour taste which gave a pretty good kick. This time we ordered sea food, both the main course tasted delicious and rich. I had baked sea bass, it was very mild yet tasted really good with the aromatic basmati rice. There was generous amount of lobster and it tasted just great. When it came to dessert we didn’t have much gluten free options so have to go with this Italian ice cream, it was creamy with a hint of vanilla bean and coconut.

After a relaxing and beautiful weekend, I am getting ready to kick off a busy week. For dinner, I had Balti Chicken Paneer and Peas. Well, Balti the name of a cuisine which is very famous in the UK. Wiki says: It’s a British-style type of curry cooked and served in a thin, pressed steel wok like pan. The origin of this cuisine is uncertain, however it is believed to have adopted from pakistani or Kashmiri style of cooking. Balti means ‘bucket’ in punjabi and refers to the wok in which the food is mostly served.

I had heck a lot of things to be done yet I spent this day sitting idle negotiating with my frozen brain. To get over this feeling I went biking in the evening. It was such a beautiful day, the sky was clear, Sun shined with so much dignity and there was a chill in the air. I embraced the nature, the weather and the ride. For dinner, whipped up an easy dish by combining mixed veggies, fava beans and basmati rice. I poured Kraft creamy masala salad dressing over this dish and there was a sudden transition from bland taste to deliciousness. It was really yummy!

I had this shaami Kabab at my cousin’s house during my last year trip to India. I instantly fell for this one and raved about this right away. After coming back, the taste of this kabab lingered to my mouth and I had to call my cousin to get the recipe. I had been wanting to try this for long and today I made it. Even though it’s made with ground beef you wouldn’t get the intense taste of the beef so even those who are not a huge fan of beef will enjoy this. My hubby who’s favorite dish is meat loaf commented that this one tasted much better than meat loaf.

The weather was lousy and I felt lazy. For dinner, I made Baked Salmon and Broccoli Egg Rice.

Rainy day!!! First thought was to make a hot soup or stew, but went with the second thought Shrimp pizza and Shrimp Pepper pizza. This pizza is gluten free that’s why the crust looks crispy, I have to tell you it’s not the best tasting pizza in the world.

Even though it was slightly chilly it was sunny and bright. We wanted to spend some time outside and so went biking. After coming home, we still wanted to be outside, and so we grilled. I made a homemade herb marinade for chicken and an asian glazed marinade for steak. Both tasted deliciously delicious and we wrapped up an awesome weekend.

Bowling with friends and had pizza for dinner. We ordered different types of pizza and I was too involved in the conversation that I almost forgot to take pictures. When there was a slice left on each plate I rushed and clicked using my cell phone.

After a week without meat and hubby started feeling uncomfortable. He even related his feeling of fatigue to his non-meat diet. I actually felt good without consuming meat for a week and I wished to continue with this diet. When I opened the freezer for making dinner, I saw chicken stacked up in it. After all making my hubby happy is my ultimate goal, hence made Green Chilly chicken for dinner.

What a great day! I was featured on Western Gazette today. Hopefully I will be submitting more recipes for the gazette. While making dinner, I actually combined everything that was in my refrigerator and pantry. I made a medley of mixed veggies, tuna, beans and brown rice, it was quite filling and healthy.

I had been thinking of making egg roast for so long, and it happened tonight. I couldn’t think of anything but poori to serve along with egg roast. Poori and egg roast along with radish stir fry made a delicious dinner for tonight.

What a relief! I’ve been feeling quite frustrated for the past few days and today I felt quite relieved. I came home and spent some time with the plants, plucked some tomatoes and entered the kitchen for making dinner. I had a raw plantian sitting in my refrigerator, I made plantain chips with it and for dinner made Baby corn in Tomato sauce.

Recipe:

Quite similar to dragon chicken, for making this I baked the baby corn at 375 F for 25 minutes and followed the rest of the recipe. I also added 1 chopped red onion while stir frying.

It was such a rewarding day! In the evening, I plucked yellow tomatoes from my garden, baked it with homegrown oregano and sprinkled with parmesan cheese. Also, made basil bean mussel stir fry.

Winding up a fantastic weekend with great Indian food at Raja’s, our favorite Indian restaurant in the city.

It was such a fun day, weather was beautiful and so many things happened today. For dinner, made Tuna in mushroom sauce.

Today was the craziest day ever in my life. On the bright side, I have been on a vegetarian diet for three days in a row. My husband and I are planning to be vegetarians for a month, hopefully it will work. For dinner, we had lentil stew.

Had a crazy day at work and it’s going to be crazy for the coming days as well as my first year research report is due by the end of this month. For dinner, I made sesame eggplant roast served over spaghetti, Tangy coleslaw and my husband made Potato stir fry.


Day 250 – Stuffed Bell Peppers and Broccoli Yogurt Soup

Made a vegetarian dinner. Last weekend, I had bought bell peppers of all colors, stuffed them with coconut potato mix and slow cooked it. It was such a chilly day and needed a bowl of broccoli yogurt soup to warm up.
