Leftover Makeover!!! Don’t I deserve to take a day off from cooking(especially after yesterday’s marathon cooking)? I was way too exhausted and the leftover food in the refrigerator encouraged me to be glued onto my couch. First, I thought of just heating the leftovers and having them. The idea of having the same food didn’t impress me and so made burgers out of the leftovers.

I had chicken fry and Yogurt Raita. I microwaved the chicken fry, heated the burger buns and smeared it with yogurt raita, placed the chicken fry, topped with lettuce and tomatoes. To hold the chicken and burger buns in place, inserted a toothpick. On top of the toothpick placed a mini yellow tomato that I harvested from my garden. It tasted really delicious, the chicken fry tasted really flavorful.

Eid celebration with friends! I designed mehndi for my friends too and they loved it. For dinner, we had Fried chicken biryani, Chicken fry, Kinnathappam and Orange Panna cotta.

Getting ready for Eid. This evening I went shopping for tomorrow’s Eid party, came home late and so made a quick dinner. Combined potato, green pepper along with black beans and added some seasonings. Surprise! hubby loved this simple vegetarian dinner.

This time I managed to overcome the temptation of using store bought marinade and made my own homemade marinade. Spread it over the chicken thigh leg pieces, allowed to rest for an hour and grilled it to perfection. I used whole peppercorns and herbs to make the marinade. While eating this my husband’s eyes opened wide..with approval :)

It was an amazing day today and we went flying. For dinner, we dined at Blue Rice Sushi restaurant. We had Sweet and Sour Soup, Philadelphia sushi, Rainbow Sushi, Szechwan Chicken and Chicken Fried Rice. Everything tasted delicious and I loved philadelphia sushi a lot.

Simple and humble dishes for tonight’s dinner. Potato Masala and Pathiri or rice roti.

I got tired of the usual shrimp curries and stir fries, this evening I still made a curry but in a totally different way. Used Kashmiri red chilli powder, hence the deep red color. It turned out good and I had this with store bought paratha.

Lavender themed dinner! Yesterday, I got hold of a bunch of fresh lavender and have been inhaling its mesmerizing fragrance. For tonight’s dinner, I whipped up a 4 course dinner everything with a hint of lavender. First, I made a healthy refreshing juice with cucumber and lavender. For appetizer, I baked home grown green tomatoes along with lavender, topped it with yogurt lavender dressing. The main dish was baked chicken legs marinated in hone-lavender sauce. For dessert, Lavender Panna cotta. I am definitely going to sleep like a baby tonight.

Felt too lazy to cook and so headed to Jambalaya restaurant. We had curried shrimp roti and curried goat.

I was so tired today, at first thought of going to a restaurant for dinner. Then I somehow managed to whip up lentil soup and chicken chow mein.

Leftover makeover. I had Quinoa and chicken leftovers, so made Quinoa cutlets with it.


Day 232 – Hubby’s B’day specials: Tiramisu cake and My signature Whole Chicken Biryani

Today is my hubby’s b’day and I was so busy making special dishes for him. I made his favorite Tiramisu cake, which turned out unbelievably delicious and he loved it. I also created a new recipe for biryani which is my signature Whole Chicken Biryani, I lack words when it comes to describe this biryani. The best biryani I’ve ever made or tasted. While having biryani, I asked my hubby to rate it on a scale of 1-10, there I was talking to a brick wall- he was so busy eating it… after 10 minutes with a smile on his face he said: “11″.

Day 231 - Quinoa Stuffed Eggplant and Zucchini

Friday night called for some fun cooking. I wanted to finish the eggplants in my refrigerator and make something with Quinoa. So why not combine them together? I first cooked the quinoa, stuffed them into the eggplants and zucchinis and baked them. I am so glad to have tried this, it turned out amazing and tasted incredible.

I am now officially a pilot’s wife, my husband got his private pilot license today. I am so proud of him and he fulfilled one his childhood dreams. It was in deed a proud moment. For dinner, I made tomato chicken curry and Idiyappam using Brown rice flour.

Idiyappam : I used rosematta or brown rice flour instead of white flour.

Leftover makeover! I had leftover chicken masala that I had used for making Erachipola, combined the chicken with rice flour and made it into a dough, fried it in oil. This closely resembles to ennapathiri (neypathiri) or oil pathiri. However, this is my version of fried orotti. I even had some leftovers from yesterday so along with that had this for dinner.

It was an amazing day, I am talking about the weather. It was so pleasant and crisp. For dinner I finally made erachipola or Chicken-egg cake, this is a Malabar speciality. I also made a milk-fruit shake garnished with basil seeds.

I was in a great mood and made all these for tonight’s dinner or iftar.  Apple dates shake, parippu vada or Fried lentil, Veggie Rice soup and ground beef stir fry made by my hubby.

Rainy day made me lazy. I lazed around and when it was time for dinner I got even more lazy. I had some leftover chicken roast, wrapped it in a pita bread and served with yogurt. It was yum!

We had a shopping spree at a Gluten free shop, my hubby got excited and relieved to see that they carry almost everything in gluten free version. They have pastries, breads, pastas, cereals, all kinds of flours and what not. Now, my pantry is stacked with gluten free products. It seems that I am turning into gluten free too. For dinner, I made chicken roast and combined it with rice pasta.


Day 224 – Pakistani Dinner @ Nemat’s

Everything was going alright with me and in the evening I fell sick, yes blaming on the sinusitis. I had dinner delivered from a pakistani restaurant: chicken biryani, beef samosa, butter chicken and tandoori chicken.

It was unbelievably chilly today, felt like summer is over and fall has arrived. This evening I was reminded of grilling, so grilled steak and served it along with tomatoes from my garden.

Used store bought Asian barbecue sauce to marinate the steak.

Finally, I overcame my antipathy towards mint. All these years I’ve never added mint in any of my dishes nor have I bought mint. Lately, I got the feeling that I need to change my atitude towards mint and and I forced myself to buy mint during my last grocery shopping. Finally, today I made a few dishes using mint. I made chicken spinach balls and added mint to it while sautéing, also made mint watermelon juice. I loved the taste of mint in both of these. I harvested beans from my garden and made mushroom-bean stir fry. I’ll be soon posting the recipes of these in my cooking website, so stay tuned.

It was a long day with a lot of research work during the day and cooking in the evening. This evening I made cauliflower bread cutlet, rice soup flavored with dried ginger and for my hubby gluten free cauliflower patties.

Day 220 – Chicken Stir Fry Salad

Monday turned out to be just fine. For dinner, I had some leftovers, also I made an easy chicken stir fry salad.

Recipe:

Chicken Stir Fry Salad:

Ingredients:

  • Chicken breasts, cut small- 2 no’s
  • Onion, chopped small- 1
  • Ginger-Garlic paste- 2 tsp
  • Green chilly, chopped- 1
  • Tomatoes chopped- 2
  • Curry leaves- 1 sprig
  • Soy sauce- 2 tbsp
  • Chilli paste- 1 tsp
  • Green onions, chopped- 2 stalks
  • Oil- 2 tbsp
  • Salt- to taste

Preparation:

  1. Heat a wok or pan, add oil let it turn hot.
  2. Add chopped onions, salt and saute.
  3. Add ginger garlic paste and saute for 2 minutes.
  4. Now, add curry leaves and tomatoes to it.
  5. Let the tomatoes get mashed up.
  6. Add chicken and cook covered till chicken turns tender.
  7. Open the lid and stir fry the chicken till all the water dries off.
  8. Add soy sauce, chilli paste and stir fry for a few seconds.
  9. Add green onions and stir fry for a minute.
  10. Serve over lettuce or your favorite greens.
