Day 120 – Butter Chicken and Basmati Rice

I cannot believe this, I accidentally deleted the pictures from my camera. I never thought that this would happen to me, and yes finally it happened to me as well, sigh! At first I did get the feeling of uploading some other picture as I have thousands of food pictures on Picasa, then on a second thought I felt I should be faithful. This is the first big oopsss moment ever.

I had a great day, had some fun riding the motorcycle. I made Butter chicken and Basmati rice for lunch, had some leftover which we had for dinner as well.

Today it was all about the Royal Wedding. By afternoon I couldn’t resist updating my FB status to: Alright people the royal show is over, now get back to your own royal activities. Anyway, congratulations to the Duke and the Dutchess of Cambridge! I had a great day  at work, after reaching home I relaxed for a while. I wanted to have a veggie dinner, so made a heart and healthy Asparagus and lentil soup. It tasted very good and a bowl of this thick soup was enough to fulfill my hunger.

I had two reasons to celebrate this day: My food blog Cooking with Thas turned 2 years old and I posted the 250th recipe. For dinner, I made Kadai chicken and fried hard boiled eggs, served with pita bread. For dessert I made Orange Saffron Panna cotta.

Super busy day for me. I had a bag of artichoke sitting in the refrigerator, I somehow wanted to use that and made artichoke chicken for dinner served on pasta.


Day 116 – Grilled Rosemary Chicken with Pepper Sauce

Sun was hiding all day long and it slowly came out showing off its brightness and shine in the evening. I first thought of pan frying the chicken and ended up grilling it.We enjoyed the sun and breeze sitting in our backyard and the sight of daffodils swaying in the breeze was just soothing to our eyes. An aromatic grilled rosemary chicken became our dinner.


Day 115 – Minestrone

If you can overcome fear, you can do almost anything. I had a long day, when I reached home I felt freaking tired. It has been raining all day long which made me feel even more worse. For dinner, made minestrone combining almost all kinds of veggies and red kidney beans. All I had to do was throw all the veggies and beans into a soup pot along with tomato sauce and a few herbs. After half an hour, I got to enjoy a hearty and healthy minestrone soup. When I feel lazy these kind of dishes come in handy, easy yet delicious!

Had a nice relaxing Easter holidays. Now that Sunday is coming to an end, getting the Sunday evening blues. For dinner I made green curry chicken and sesame spinach.


Day 113 – Grilled Chicken Salad and Eggplant

What an amazing day we had! We drove around in the morning, biked around in the evening and grilled at night. Hoping to have more sunny and splendid days like today. Grilled Chicken breasts and eggplant served on lettuce was our dinner.

Had a relaxing time at home. For dinner I made: Anchovy Mango Curry, Beetroot Thoran and Red rice.


Day 111 – Sushi Dinner @ Wonder Sushi

Day 111 - Sushi

Sushi night! It’s true “never say never”. When I came to know about sushi and the fact that it has raw fish in it made me say I’ll never try sushi, then when I saw my hubby gobbling up with so much craze I got an urge to try it. After a couple of tries I nodded with approval, then I became a fan of it, a die hard fan and now a slave of it. Though I love all kinds, I would say my favorite is crispy spicy salmon.

When the freezer is out of meat, I approached vegetables in the refrigerator. Made veggie chow mein and baked snap peas for dinner.

While thinking about Easter dishes, I saw “Appam and Beef stew” plated in front of me. To make this real I made these dishes this evening. In Kerala, these are the special dishes served on Easter.

Fell sick again, it’s the rainy depressing weather that’s making me sick :( For dinner I made a quick chicken tikka masala and had with pita bread.

Oh, give me a break! It was snowing all day today, snowing in spring? Yes, totally weird things are happening, hmmm. I had King fish and made a Malaysian style dish combining king fish and basmati rice.

Rainy weather= Moody Me. I know lately I’ve been starting most of my post referring about the weather, obviously weather influences our mood. I made an early dinner today, this is the first time I used dried chow mein noodles. I absolutely loved this dish, with shrimp it tasted great.

Friday night and feeling so relaxed. It has been unbelievably windy today yet I went biking this evening, I gotta tough coach so have to do it. Anyway, I’ve been doing pretty good so far and having a good workout too. One of my non-Indian friends at work brought Vindaloo chicken for lunch (she used the store bought sauce), I decided right away that Vindaloo chciken is going to be my dinner. Vindaloo chicken along with Tapioca stir fry was my dinner.

Had so much fun biking this evening. I felt too lazy to cook dinner, after a while when my hunger got intense I hopped into the kitchen and whipped up an easy korean style chicken with cauliflower and green pepper using Korean Barbecue sauce.

I am so in love with spring, it’s sunny with a chill in the air. Every summer I try to explore and do different activities, this summer I’ve started biking and loving it like anything. After a few hours of biking, I came home and started grilling. Chicken and red potatoes grilled!

This is the first time I am trying black bean sauce, well I liked it. Made veggie stir fry and chicken stir fry with black bean sauce.

It was a windy day! This evening I had my first bike ride and I learned to ride by myself in just an hour, reason: I had an awesome coach, my hubby. When it was time to cook dinner I got creative. First I made mussel roast and stuffed them into rice dumplings and steamed them after wrapping it in banana leaf. It was absolutely delicious, my husband and I gobbled them up in no time.

Day 100 – Grilling: Scallops, Steak, Asparagus and Pears

Day 100 - Grilling: Scallops, Steak, Asparagus and Pears

First outdoor grilling of the year. It was more than a perfect day today, unbelievably hot and sunny. I guess summer is ON, hopefully no more snow and cold weather. After a long busy shopping day, in the evening I decided to grill. I bought fresh scallops and so grilled it, I served them over creamy asparagus saffron sauce. For my hubby, I grilled steak. For dessert we had grilled pears. We sat outside for a long time enjoying the beautiful weather and delicious dinner.

Day 99 – Dinner @ Windjammer Inn

Day 99 - Dinner at Windjammer Inn

Had a perfect day, it was warm and sunny. We took advantage of this day and went to Port Stanley beach, it was about 45 minutes drive away from our house. For dinner we dined at Windjammer Inn at Port Stanley. Incredible food and a great ambience.

Soup: Tomato Soup

Appetizer: Pickerel cakes and Crispy salmon rolls.

Main Course: Pan Seared Pickerel with Asian Rice Pilaf, Gingered Snap Peas, Citrus Wasabi Salsa

Chévre and Spinach Stuffed Chicken Breast with Roasted Mini Potatoes, Market Vegetables and Roasted Red Pepper Sauce

Dessert: My favorite, Creme Brulee.


Day 98 – Pizza and Chicken wings Carry-out @ Panago

Day 98 - Pizza and Chicken wings

I am so full and satiated!!! It’s friday night and we felt like celebrating. We got two kinds of pizzas and two kinds of chicken wings for dinner. Tropical pizza and Philly steak pizza. Hot buffalo chicken wings and chicken tikka chicken wings. After having this we are so full and can’t move right now, looking forward to a great weekend.

 


Day 97 – Cilantro Shrimp Curry

Day 97 - Cilantro Shrimp Curry

Had an amazing day and the weather cooperated well. It was 51 F today and was sunny, bright with soothing breeze. Came home and right away made this shrimp dish. This could be enjoyed by itself or along with noodles or rice. One of the best shrimp dishes I’ve ever made, aromatic and flavorful. After a delicious dinner I went for a walk with my friend and felt so relieved. I would love to have days like this quite often.
