We went bowling this evening and had dinner at DQ. We ordered Chicken salad, Wraps, french fries and onion rings. Had a nice time bowling.

A day of celebration for all Indians as India entered the cricket world cup final. It was in deed a proud moment. I had so much fun at work watching, cheering and teaching cricket to all my non-Indian co-workers. All I had to talk about for the past one week was about the cricket semi final and I am so glad that we won. Now, looking forward to the final on Saturday, keeping my fingers crossed. For dinner, I made two dishes: one with chicken and the other with squid. Eggplant chicken and Kerala style Squid stir fry.


Day 88 – Okra Chive Fry and Stuffed Okra

I love Okra and it’s been a while since I made any dish with it. I got really fresh okra over the weekend and so decided to make an Okra dinner. I made two dishes with it: Okra-Chive fry and Stuffed Okra. It was a simple yet delectable vegetarian dinner.

I had to find a way to beat my melancholy , by making and having this almond chicken did help me to beat it quite a bit. Almond chicken with Ghee rice and Naan.


Day 86 – Dinner with Friends

It was a long, tiring yet a happy day. My friends came over for dinner and obviously I cooked all day. Made Tuna cutlet, Dragon chicken and BroccoliBarbecued Rosemary Chicken drummettes, Ghee Rice, Naan (store bought)  and Orange Panna Cotta.

I had an early dinner and I almost forgot about updating the picture here. When it clicked 11:45 pm, I was reminded and here I am uploading my tonight’s dinner picture. I had yogurt chicken with lettuce for dinner. Have a great weekend everyone!

I had a heavy lunch today and so felt full even when it was time for dinner. At first, I felt like skipping the dinner, then for my husband I had to whip up something. I wanted to finish the collard greens, so I stir fried it and added beans, pasta to it. Finished it off with flaxseeds. I couldn’t resist having a plate of this veggie stir fry. It was in deed very healthy and delicious. To my surprise my hard core non-veg hubby gave a thumbs up!

Whoever thought that spring is kicking in were totally deceived by the warm and pleasant weather we had for the past few days. Last night, everything turned upside down and we had a severe snow storm. This morning we had to greet back winter. For dinner, I pan roasted the chicken and served on a bed of caramelized onions and baked Parsnips.

I was a bit frustrated today and to ease off I entered my kitchen and cooked. Its been a long time since I made Palada or Rice Crepes, my mom makes this on special days. Palada and Caramelized Onion Beef Roast along with Saffron Pasta Pudding helped to cheer me up.

Even though it wasn’t a great day, it was a lucky day as I won a coffee from Tim Hortons. For dinner, I made a Sesame Shrimp salad. This is a very easy to make recipe and it tasted great.

It was a very rewarding weekend! This weekend, I had spent a lot of time in my kitchen making dishes that I had never tried. Every time I try new dishes and when it turns out great, I feel so satisfied and amazing. For today’s lunch, I made an authentic Kerala style lunch with Spicy Mackerel fish curry, fish fry, rice and yogurt curry. When I have lunch like this, I wouldn’t mind going for a second or even a third round. I was so stuffed to my gills and took a nap. Woke up so refreshed and for dinner I made Swiss Chard and Moong Dal chicken. A very healthy and filling dish.

What a splendid Saturday I had. Something very unusual happened today, I woke up early this morning resisting the warmth and coziness of the blanket. Started this day with a Collard Green Scrambled eggs breakfast. I had a bundle of collard greens still left, so for dinner I made Tomato chicken and stuffed it into Collard greens. Topped it with salsa and grated parmesan, baked for 10 minutes. I can’t put into words how much we loved this healthy and delicious dish.

For me, Fish fry and Tapioca= pure bliss!!!

In winter I usually avoid frying fish, even with the exhaust turned on and with constant spraying of air freshener, fish smell will linger in the house for a few days. Even if I somehow manage to get along with this smell, this is truly not tolerated by my husband. Today was such a warm beautiful day and I had been looking for such a day for so long. I absolutely did take advantage of this day and made fish fry. Mackerel was my catch of the day. With all the windows and doors open, I started frying mackerel. To go with it I also made a spicy, tangy tapioca stir fry. I’ll be posting the recipe soon on my cooking website.

If I have dishes like this everyday I think I can manage to be a vegetarian for at least a few days. Towards the end of the week, I would have emptied my meat stock in the freezer and there will be only a few vegetables left in the refrigerator. Luckily, I had red pepper and so made couscous stuffed red pepper for me and for my husband, Corn pasta stuffed red pepper (Gluten free).

Chirping of birds, drizzling rain, cloudy sky, cool breeze and fleece wrapped people YES! spring is almost here. Spring reminds me of green and so to welcome spring I made a green dish: Broccoli Soup. I had puff pastry in my freezer and so I baked puff pastry topped with chicken loaf slices and spinach.

What a beautiful day it was! Looks and feels like spring is around the corner. Made a quick broccoli chicken noodles for dinner.


Day 73 – Dinner @ Braise

The truth: No matter how I try, I literally cannot stay away from restaurant food for more than a week. I’ve been having homemade food for the past one week, this evening my taste buds started to act weird and pleaded me to take it to some good restaurant. And I agreed! Had dinner at Braise with my hubby.

Appetizer: Pan seared Scallops in saffron sauce: This was my favorite, scallops was very tender and the fennel puree with a hint of saffron tasted phenomenal.

Main course:

For me: Butter poached Lobster

For hubby: Dry aged ribeye and Creamy bonemarrow

For Dessert: Mascarpone Cheesecake: I am a huge fan of mascarpone cheese and so loved this cheesecake.

Why do weekends always end so fast??? I had a really lazy weekend, most of the time I was glued to my couch watching movies, browsing and listening to music. I felt so hard to move from my couch and to make tonight’s dinner. When the clock ticked 8 pm, I had no other choice but push myself to the kitchen. When I started cooking, the warmth from the heat and the aroma from the ingredients opened my senses and suddenly I regained my passion. Made spring onion chicken and corn pasta.

Lazy Saturday!!! When I get lazy I make Haleem, all I have to do is throw all the ingredients into the Pressure cooker and in no time I can enjoy a hearty thick soup which is healthy and tasty.

What a day!!! Last night, almost all the snow had melted and it was drizzling, which gave hopes of spring and warm weather. This morning when I woke up, I witnessed a totally different view in my backyard: blizzard and piles of snow. As I was whining about the snow storm, I came to know about the heart breaking news of massive earthquake that hit Japan, this literally put a seal on my mouth. My prayers to Japan!

It’s been a while since I had fish and so for tonight’s dinner I made sure to make fish. I pan fried Pollock fillet and served it on a bed of spicy veggies. It was Yum!

Day 68 – Karkidaka Kanji or Medicinal Porridge

Day 68 - Karkidaka Kanji or Medicinal Porridge

Flu Viruses embraced me and I have been cuddled up under a blanket all day long. For dinner, I could only think of Rice Porridge. While searching for some ingredients in my pantry, my eyes fell on the Karkidaka Kanji Kottu or Medicinal Mix for making Porridge that I had brought from my hometown last year. This medicinal porridge is consumed by most of the people in Kerala during the Karkidaka month (July 15-August 15) which is a special month for Ayurveda care and cure. This should be eaten for 7 days straight for better results. Well, I thought this would make the best dinner for me tonight.
