Day 31- Pomfret Fish Fry and Lotus Root Stir Fry

Phewww, that was one heck of a day. I was seriously not in the mood to make dinner and I tried my best to slack off. But when I saw the Lotus roots sitting cozy inside the refrigerator, I was tempted to take that out and to make something with that. After searching Google about lotus root cooking methods, I kinda got some ideas about how to deal with it. I first tried deep frying it after seasoning it with a few spices. I was so anxious to taste it, one bite of it and I fell head over heels for it. Loved the crispy fried lotus roots and finished it as soon as it came out of the oil. I had some more roots and hence made a stir fry with it. Pomfret fish fry was the other dish. That was one simple yet delicious dinner I had.

Woohooo, I nailed it! I’ve successfully uploaded this month’s 31 dinner. I got a long way to go to make it Dinner 365!

What a weekend! I am so glad that I didn’t slack off this weekend. Weather was perfect, we took advantage of it and went for a long drive and roamed around. After coming home we relaxed for a while sipping hot Cappuccino. One of the things I love when the weekend comes to an end is that by Sunday evening my refrigerator and pantry will be stacked with produce. For tonight’s dinner I made Okra Chicken seasoned with Soy sauce, Chilli- Garlic paste and Sesame oil. I love the mushy texture of okra and the seasoning made this dish simply terrific. I am absolutely ready to kick off a wonderful week.


Day 29 – Tapioca Fish Biryani

I got a lot of things done today and I am so happy about that. This noon, I had a produce shopping spree and came home with so many new veggies and other things to try out. Lotus root was one such veggie I bought from the Asian Super market. I still have no clue what to and how to cook with it, however I am amazed about its health benefits, so it’s definitely a good buy. I also bought a few pounds of Tapioca or Cassava or Yuca root. Tapioca is a staple food of Kerala, it’s pretty cheap and available all year round. Whenever I see good and fresh tapiocas I can hardly resist them. I also bought fresh King fish, my favorite fish. I was so excited to make tonight’s dinner combining tapioca and king fish. Kerala style Tapioca Fish Biryani was the outcome and I loved it!

Day 28 – Dinner @ Jack Astor’s

Day 28 - Dinner @ Jack Astor's: Thai Chicken Summer Roll, Caesar Salad, Fish and Chips, Chipotle-Mango Rubbed Salmon and NewYork Vanilla Cheesecake

As much as I love cooking I like to eat out as well. After having home cooked food for almost two weeks in a row, my taste buds started getting cranky and my stomach craved for a good restaurant food. When I get this feeling, I make sure to succumb to my cravings. As soon as we got back from work, we quickly made plans to dine out. We went to Jack Astor’s and there was good crowd and great atmosphere.

Starters: Thai Chicken Summer Rolls and Caesar Salad

Main Course:

I had the Chipotle-Mango Rubbed Salmon, I seldom order Salmon at restaurants as I am not a huge fan of it, but just for a change this time I ordered it, it wasn’t that bad. Since I like my fish to be spicy I had to add chilli sauce to enhance the spiciness.

My husband ordered Fish and Chips with Tartar sauce, I stole some chips from his plate :D

We were pretty full after this. When the waiter handed us the dessert menu, I was more like I don’t need dessert, but the man ordered: NewYork Cheesecake. It’s very hard for him to resist desserts and to have the complete meal experience he has to finish it off with a dessert.

I had a very light lunch this afternoon and so I wasn’t surprised when I had the call for food at 4 pm. I was literally thinking about all yummy food till I got home. As I reached home, I started thinking about what to make for dinner. I even had the temptation to dial the phone and get the dinner home delivered. Before I could do that, an idea popped out of my mind. To make Idiyappam in less than 15 minutes using cooked Rice Vermicelli and to have it with Poached Egg Curry. As anticipated, I was able to whip up this dinner in less than 30 minutes. Recipe: Instant Homemade Idiyappam

I almost made up my mind to have my dinner delivered from a nearby restaurant. After a second thought I decided to make it by myself and made a quick Chicken Noodle Salad with Spicy Asian dressing. I made the dressing from scratch using soy sauce, rice vinegar, brown sugar, chilli garlic paste etc. Marinated the chicken breast in half of the sauce and grilled it, stir fried the veggies in little bit of the sauce and topped the chicken, veggies on rice noodles; drizzled the rest of the sauce over the salad.

Today has been a screaming day for me, screaming at the Flu viruses that are trying to embrace me. So far it hasn’t had the chance to come near me, well if they are going to mess with me, I say bring it on. I seriously cannot afford to take off from work for a while, sigh!

Today has been a quite satisfying day for me. When you do something, even if it’s a small thing, if it has brought a smile on someone’s face and satisfies your heart you have all the right to be happy. I came home quite hungry and that reflected in my dinner as well. I wanted to make several dishes and ended up making Falafel (made patties using ground chick peas, grated carrot and spices), had to empty some of the veggies so made a stir fry with red pepper, beans and spinach, then popped the question: What’s for dessert? And the answer was “Carrot cake”. This was a pretty good dinner and I am FULL!!

Freezing weather was the talk of the day. In the evening when it started snowing I felt much better and I never seem to get tired of watching snow showers. Had to work late so hubby was in charge of tonight’s dinner. As expected he did make mashed potatoes this time as well. My husband and mashed potatoes are inseparable! He baked the chicken breast after marinating it with a citrus herb sauce. I should admit that my hubby is becoming an expert at making mashed potatoes. This time he enhanced the flavor by adding caramelized onions and garlic to the potatoes. He wanted to make this dinner complete with gravy, so I gave the final touches and whipped up a quick aromatic gravy. Dinner was YUM!


Day 23 – Home made Masala Dosa

I can’t believe weekend got over so fast, it’s always on Sunday evening I realize that I have a lot of chores to complete and will seen running around the house like a mad women. Had Masala Dosa for dinner. Looking forward to a great week ahead!

After a video chat with my sister and niece, I curled up on the couch home sick and nostalgic. Oh ya, I get this kind of feeling quite often. On such days, I try my best to cheer myself up usually by making the foods that I had enjoyed with my family. Foods that are filled with memories, laughs, comfort and full of life. So this evening I decided to make a fried snack that could bring back those beautiful memories of my family and hometown. My husband and I emptied the entire plate in just one sitting, it was so good! I felt pretty tired after that and for dinner I made Rice-Mung bean coconut milk soup or Kanji topped with olives.

I swear today was the coldest, longest and the hungriest day of my life! As soon as I reached home, greedily gobbled up everything and anything that was found in my pantry and refrigerator. Was pretty full and hence wrapped up this day with a bowl of warm lentil soup. Looking forward to a slumber weekend!!!

My way of expressing appreciation is by cooking delicious food. Couldn’t appreciate my husband enough for all the support and love he showers me each and every moment. I made today’s dinner special by making Chicken Manchurian and served it over healthy Cauli Rice.

Recipe

Chicken Manchurian Recipe:

Ingredients:

  • Chicken, boneless diced- 1 pound
  • Oil- for deep frying

 For making batter:

  • Corn flour- 1/3 cup
  • Flour- 1/3 cup
  • Ginger-garlic paste- 1 tbsp
  • Chilly powder- 1tsp
  • Pepper powder- 1/8 tsp
  • Salt- to taste
  • Water- enough to make thick batter
Other Ingredients:
  • Oil- 3tbsp
  • Ginger, minced- 1 tsp
  • Garlic, minced- 1 tsp
  • Onions, chopped- 3 small
  • Soy sauce- 3tbsp
  • Tomato sauce- 1 cup
  • Sesame oil- 1tsp
  • Chilly paste- 1/2 tsp
  • Green onions, chopped- 1 stalk
  • Cilantro, chopped- 1 handful

Preparation:

  • Combine all the ingredients to make the batter.
  • Add chicken to the batter and deep fry it in oil till golden in color.
  • Heat a large pan, add oil let it get hot.
  • Add ginger and garlic, saute for a minute.
  • Add onions, saute till tender.
  • Now, add soy sauce and tomato sauce to it.
  • Let it come to a boil.
  • Add little water if needed to thin down the sauce.
  • Add the fried chicken to the sauce and cook for 2 minutes.
  • Add sesame oil and chilly paste to the chicken, combine well.
  • Cook for 2 more minutes.
  • Finally, add cilantro and green onions, saute for a few seconds.
  • Serve over Caulirice.

Who wouldn’t wish for a homemade dinner to be ready on the dining table when you are back from work? Today my wish came true. As I stepped into my house, I stood still on the door steps inhaling the aroma of this Turkey Meat loaf made by My Man!

Dinner in just 15 minutes. Wish I could make these kind of dinner everyday. Topping: Salami, Green Pepper, Mushroom, Jalapeno, Sun dried tomatoes.

It was a great day for me by all means, yet I felt so depressed for no reason. On such days I enlighten myself with delicious food. I was so damn sure about what to make for dinner. Food that I grew up eating have always been a comfort for me, especially during lousy days. Kerala’s famous Puttu with Chicken drummettes curry cheered me up!

I can’t believe I slept like crazy today. I woke up at noon, had a quick lunch bite and hit the bed again. Woke up again and heard the voices of a hungry man: What’s for dinner honey? I instantly entered the kitchen and made Ginger Chicken and Baked Eggplant, served this with Pita bread for me and Salad for my husband. Now, looking forward to a great week.

Impromptu dinner at Boston Pizza: Tuscan Pizza and Nachos. Had a great night!


Day 11 – Sesame Chicken and Chicken Kabab

Despite a tiring day, this evening I was in a great mood to cook a new dish, Sesame Chicken. I served Sesame chicken along with Chicken Kabab on a dried lemon grass skewer.

Sesame Chicken Recipe

Ingredients:

  • Chicken, boneless diced- 1/2 pound
  • Oil- 2 tbsp

To marinate chicken:

  • Corn starch- 3 tbsp
  • Soy sauce- 2 tbsp
  • Water- 3 tbsp
For making Sesame chicken
  • Oil- 1 tbsp
  • Red dry whole chillies- 2 no’s
  • Garlic, minced- 3 cloves
  • Ginger, minced- 1 inch
  • Onion, chopped- 1
  • Carrot, cut round- 2 no’s
  • Scallions, chopped- 2 stalks
  • Sesame seeds, roasted- 1/3 cup

Making sauce:

  • Soy sauce- 4 tbsp
  • Rice vinegar- 1 tbsp
  • Chilli paste- 1/2 tsp
  • Corn starch- 2tbsp

Preparation:

  1. Marinate the chicken in corn starch, soy sauce and water.
  2. In a wok, add 2 tbsp oil and stir fry chicken till golden brown, keep aside.
  3. In the same pan, add 1 tbsp oil, red dry whole chillies, saute for a second.
  4. Add ginger and garlic, saute till aromatic.
  5. Add onion, carrot and stir fry till tender.
  6. Add the stir fried chicken to the veggies.
  7. Combine all the above mentioned ingredients to make the sauce.
  8. Add the sauce to the chicken and veggies, combine well.
  9. Stir fry for 2 minutes.
  10. Add chopped scallions to it.
  11. Finally add roasted sesame seeds, combine well and stir fry for a minute.
  12. Serve hot.

Steak and mashed potatoes for him / Salad and Pita for her. As soon as my husband came to know that it’s going to be a vegetarian dinner, he started making Steak and mashed potatoes.


Day 9 – Schezwan Vegetable Fusilli Pasta

Pastas come to rescue me during days of laziness. Had a super lazy Sunday and in the evening quickly whipped up Vegetable Fusilli pasta in Schezwan sauce. I am glad I had a veggie dish for dinner.
